June 11, 2024 Breakfast - Men on a raft. Lunch - Leftover Vietnam 2000 No. 30. Dinner - Roasted Potato with Sour Cream, Hamburger, Mushrooms, and Shallots
I woke up at 7:45 and Suzette was trying to buy shares of NVDA. It was down a little but not as low as yesterday. She bought about $.50 above the close, so well done.
Today there was a surge in buying Apple and it went up $14.00 which is a huge move for Apple. Even though NVDA and several other stocks went down, my portfolio had a great day, rising 1.6% to a new all time high.
I worked in the morning and ate the leftover noodles and pork from Friday’s lunch at Vietnam 2000.
At 12:45 I watched Portugal win a friendly against Ireland 3 to 0.
Then I drove to Bill Turner’s office to review a transaction.
I returned home at 4:30 and drank a gin and tonic while Suzette drank a mojito.
We decided to bake russet potatoes and roast some small creamer potatoes with onion, and garlic.
I fetched a frozen hamburger from the garage and minced a shallot and sliced six mushrooms and Suzette sautéed those ingredients and added the crumbled defrosted hamburger and chopped kale from our garden to make a hamburger helper type meal. I sliced two green onions into thin ringlets as garnish and fetched the sour cream.
When the russet potatoes were roasted, Suzette made a stack with a butter filled roasted potato on bottom, then hamburger helper, then sour cream and finally finely chopped green onion.
It was a perfect dinner dish. Hearty comfort food.
I chose a bottle of 2021 Kirkland Chianti Classico Riserva, a very nice wine for the $8.99 it usually costs.
Dinner was great. A creative use of available ingredients.
We watched two hours of Finding Your Roots repeats and then went to bed.
I stayed up to blog until 11:00.
Bon Appetit
