July 18, 2018 Lunch – Amore. Dinner – Acorn Squash Stuffed with Sautéed Potatoes, apples, onion, Italian Sweet Sausage, and garlic with Roasted Broccoli

July 18, 2018 Lunch – Amore. Dinner – Acorn Squash Stuffed with Sautéed Potatoes, apples, onion, Italian Sweet Sausage, and garlic with Roasted Broccoli

I ate yogurt, granola, milk, blueberries, and a slice of fresh pineapple for breakfast and then watched Stage 11 of the Tour de France that was an immensely exciting mountain stage in the French Alps.  Two members of the British Sky team ended up in first and second place in the general category and Garett Thomas who won the stage put on the yellow jersey as the overall leader in the race.

I went to lunch with Rahim at Amore, a new neighborhood restaurant that features Neapolitan pizzas.  We shared a lovely Waldorf Salad and a Truffle pizza, which was a thin crust pizza covered with an Alfredo sauce, fresh halved grape tomatoes, chopped basil leaves, and drizzled with white and black truffle oil.  It was very light and delicious.








Rahim drank a Boese Brothers white beer and I drank a Boxing Bear Chocolate Stout.  I tried both beers and enjoyed both and liked Amore.

I went to meditate at 5:30 and when I returned a bit after 7:00 Suzette was cooking dinner.  She had drizzled olive oil on broccoli flowerets, removed the seeds from two acorn squashes she had picked in her garden at the Center for Ageless Living in Los Lunas and halved. She the sautéed two diced Italian Sweet Sausages in one skillet and diced onion, garlic, potatoes, and salt and pepper in another skillet until lightly browned.  She then combined the two skillet’s contents and stuffed the squashes and Baked them and the broccoli until tender.  I grated Pecorino Romano cheese and we sprinkled it  onto the baked squash.

Willy came over and we watched the last twenty minutes of Stage 11 and then ate dinner.  Here is a photo.



We then watched a Sasha Cohen short.  I fetched the Clafoutis and Suzette and I ate several bites of it.

 When Willy left a little later I went to bed and blogged.
