July 4, 2024 Breakfast - Lax and Bagels, Lunch - Cobbler with Whipped Cream. Dinner - Leftover Plaice Yaki Tori, Wagyu steak, mushrooms, lamb, chard, udon noodles, and Roasted Butternut squash

 July 4, 2024 Breakfast - Lax and Bagels,  Lunch - Cobbler with Whipped Cream. Dinner - Leftover Plaice Yaki Tori, Wagyu steak, mushrooms, lamb, chard, udon noodles, and Roasted Butternut squash


We toasted and spread cream cheese on bagels and garnished them with slices of onion and Gravad lax around 8:00. Willy and I drank tea and Suzette drank water.





We then drove to Pot Creek Cultural Site Trail that is a couple of miles past Talpa.


We walked about 1/2 mile and discovered the meaning of sipapu. It is a small hole in a kiva through which the spirit of those being born and those dying pass. Then Willy drove on to Sipapu to hike and we drove back to Taos. As we drove through Talpa, we stopped for a conversation with Suzette’s mom who is 99 and her sister on the phone with face time.


We found coffee for Suzette at the coffee apothecary again, but could not find an open thrift.  We drove north all the way to Millicent Rodger’s Museum but it was closed also.


We went to Wilder Gallery but its selection was terrible. Finally, we returned to the house at 11;30 and ate a piece of cobbler heated in the microwave with a dab of whipped cream for lunch.




We rested in the afternoon and at 5:00 we turned on the TV and watched France beat Slovenia in overtime in EUFA competition.


Then at 6:00 we made dinner. We combined many of the ingredients we brought, including the fancy mushrooms, the PPI grilled lamb, the chard and kale from our garden with the 1/2 of my leftover dinner from last night that included a chunk of Wagyu steak and several chunks of roasted butternut squash, the fried fillet of plaice, and udon noodles.  The combination was wonderful accompanied by a bottle of chilled 2022 Palantir French Sauvignon Blanc. I liked this supplemented meal better tonight than this meal last night at Aceq.







After dinner we started watching the Argentina v. Ecuador Copa quarterfinal and decided to stay home rather than go to Kit Carson Park.


We started watching fireworks at NYC at 7:30 and then Philadelphia on TV and after the match, which Argentina won on penalty kicks thanks to goale Martinez blocking two of Ecuador’s penalty kicks, fireworks started going off just down the hill from the house. The display went on for at least 1/2 hour and was one of the best displays I have ever seen with multiple large aerial displays going up together.


After the fireworks Suzette wanted to see a movie and TMC was showing North by Northwest with Cary Grant and Eve Marie Saint to celebrate her 100th birthday, she is still living. The movie is ranked number 40 among the 100 best American movies.


Suzette had never seen the movie and liked it.  We went to bed at 11:30.
