December 8, 2022 Lunch - 2000 Vietnam. Dinner - Rockfish baked in foil with rice.
Today was another two meal day. I ate another blueberry bar with water for breakfast. Then I worked on a pleading until lunch.
Peter arrived and drove us to 2000 Vietnam for lunch. It was his turn to treat. Peter chose No 76, Egg Noodle Soup with duck leg and I copied him. He then suggested Vietnamese drip condensed milk coffee and I chose to order us an order of fried egg rolls to share instead of coffee, because I can make Vietnamese coffee at home and 2000 Vietnam’s fried egg rolls are the best in town in my opinion.
Soon the four egg rolls came steaming hot with iceberg lettuce leaves and a side dipping bowl of fish sauce with daikon and carrot threads on the side. We wrapped each of our two egg rolls in a lettuce leaf and dipped them into the fish sauce. They were still hot but just short of burning our palates, so the steam captured inside the tightly wrapped rice sheet burst into our mouth with the first bite.
The waitress also brought a small elliptical shaped plate filled with fresh Oriental basil, cilantro sprigs, slices of jalapeño, wedges of lime, on a pile of mung bean sprouts. I stripped the leaves from the stalks of cilantro and basil. Then in a few more minutes the waitress brought bowls of steaming broth filled with green onion slices, egg noodles, and a roasted duck leg.
We put mung bean sprouts, the cilantro and basil leaves and squeezed lime juice and hoisin into the large bowls and then ate the soup with relish until we could eat no more.
The waitress brought us Quart styrofoam cups with lids and plastic bags and poured poured each of our remaining soups into a separate cup and tIed a plastic bag around each cup tightly.
Peter drove us home as I held the cups.
I arrived home a few minutes before 2:00 so was able to see the Market close up for the first time this week.
I filed and mailed the pleading and went to the bank, post office to mail the pleading, and finally Lowe’s Market where I bought a jalapeño pepper, a quart of tonic water, and a quart of heavy cream.
When I returned home at 5;30 Suzette was home. I sent two or three e mails and then joined her in the kitchen.
Suzette was constructing foil wrapped Rockfish fillets cut into four nacho long pieces and topped with mushroom slices, diced green onion, carrot strips, steamed asparagus stalks, slices of butter and a dash of white wine.
We also made a fresh pot of rice with one cook of rice in two cups of boiling water and a tsp. of Knorr Dehydrated chicken stock simmered for 30 minutes,
At 7:00 Willy arrived and in another twenty minutes Suzette served the foil wrappers filled with the steaming fish and other ingredients with a pile of rice beside the foil containing the fish.
I poured out the rest of the Kirkland Marlborough Sauvignon Blanc and we enjoyed a wonderful dinner that Suzette and I could not finish.
We talked for a while. Willy told us about his trip to Sayulita and his work assignments and Suzette ranted a bit about how young people do not want to work hard. Apparently she is hiring and finding few people willing to work hard or express and concrete life goals.
Later after Willy left I had two Belgium chocolates with a cup of chai and we went to bed at 10:00; after watching an episode of House Hunters International about a South African couple relocating to Haarlem, Netherlands.
The big news today is that Brittany Griner was released from a penal prison in Russia and returned to the U.S. and the DOJ filed a request for contempt charges against Trump’s document legal team as two new top secret documents were turned over to the FBI by Trump’s Attorneys who verified in June that all documents had been returned.
