April 29, 2022 Breakfast - Steak, Shishito Peppers, Potato, Goat Cheese, and Mushroom Omelet.  Dinner - Josephine’s House, Austin



When we awoke, we packed and showered and dressed. Before I showered I put out the ingredients for a steak omelet.  I found the fresh Shishito peppers, the steak, the last three eggs, the last two green onions, a small onion, and a mushroom.


Suzette, who was already dressed took over and I went to shower.  She added slices of a previously baked potato and goat cheese to the ingredients and dispensed with the onion to make a beautiful omelet.


I toasted a slice of French baguette and spread it with butter and apricot Hero preserves.



We left for our 1:30 flight at 11:40 and arrived in Austin at 4:30.


After driving to our apartment/BNB and dropping our bags we drove the five blocks to Josephine’s House for dinner.  Suzette selected Josephine’s because it was close to our apartment and served a modern American menu.


We were met by Isabel and Felicia Simpson, Dee’s daughters, at 7:30 for dinner.  They ordered drinks and I ordered Aix rose’ from the Coteaux de Provence Appellation. 



We shared all the dishes.  Suzette and I ordered the Charcuterie platter, which was very special. It included slices of Spanish chorizo, dried prosciutto, a lovely pate de Campagne with pistachios, an amazingly wonderful chicken liver mousse mixed with a current compote, and a small ramekin filled with slices of pickled daikon.  It was served with a basket of slices of sour dough white and a dark seeded bread.



Felicia ordered a pork chop pounded into a Weiner schnitzel and breaded and fried served with mustard and a kohlrabi Cole slaw,  Isabel ordered the sautéed red fish fillet with a lovely shrimp cream sauce with potato slices.  I particularly enjoyed the shrimp in the cream sauce accompanying the red fish.

Suzette and I split a chicken thigh tagine with chick peas and squash with the mild Morrocan chicken spiced sauce.




We talked and talked.  I got out of the way early that Dee was my best friend and I missed him as much as they probably did.


All the girls ordered glasses of Aix with dinner after they finished their drinks.


Felicia was excited because she was traveling soon to Oaxaca. 


We told her what little we knew.


Finally we said goodnight at 10:00.
