June 2, 2026 Breakfast - Pain au chocolate Lunch - Mary and Tito’s with JD. Dinner - Vegetable Stroganoff 


I woke up at 7:00 and watched the Market open and a bit of Morning Joe.  It seems the President has become bored with the War in Iran, which is horrible. Bthe good thing is that the DOJ has stopped the 1.776 billion fund until after a trial because the federal judge enjoined it.


I ate two thin slices of toasted bagel  with cream cheese, red onion , and thick slices of Gravad lax.




Then I read the Texas v. New Mexico settlement for a while. 


At 10:50 JD called and we met at Mary and Tito’s for lunch a few minutes after 11:00.


JD ordered a chili Relleno plate and I ordered a three taco plate with double refried beans. I gave J D a taco and he gave me half of one of his rellenos.  The Relleno was delicious and so were the tacos.


After lunch we drove to my house and I showed him my wine cellar and Art and opened a bottle of Cuarto Osos dry rose of Mencia we bought at Martin Codax Winery in Cambados, Spain. Suzette joined us for a glass of wine.


At 1:45 JD left and I watched the market close and then checked my portfolio. It increased another 1% today. That does not sound like much but since April 7 the portfolio has increased almost 25%, which is huge.


Unfortunately it illustrates the difference in wealth between the top 10% of US citizens who hold 80% of the wealth and the bottom 90%.


At 3:00 I napped until 4:00 when I watched Ari’s The Beat until 5:00.


Then Suzette and I drove to El Super for milk and brown sugar and ended up also buying Mango yogurt, limes, lemons, avocados, green onions, three smoked pork cutlets, a bunch of beets, broccoli, sour cream,flour and corn tortillas, cilantro, carrots, yellow and red onions, a bag of egg noodles, and tomatoes.


When we returned home we rested and then decided to combine the leftover steak, sweet potatoes, and  cream of mushroom soup and add the beet leaves, half of a red bell pepper and an orange Italian sweet pepper and toss with boiled egg noodles to make a vegetable stroganoff. We started by making a beef broth with the steak T-bone, plus carrots, celery, and onion.


Then I minced 1/2 onion and the red and orange pepper and three cloves of garlic from our garden and diced the leftover steak that Suzette then sautéed and added the chopped beet leaves and diced sweet potato.when the noodles were cooked she added them and the mushroom soup, sour cream,  and broth to make a smooth stroganoff sauce.




We opened a bottle of Precision Cabernet Sauvignon we bought at Costco. The tannic tartness of the wine went really well with the slight cream I that went really well with creaminess of the sauce and sweetness of the potatoes and pepper. It was a tasty dish that used a lot of leftovers, which provided space for all the new produce and groceries.


Later we watched an exciting game 1 of the Stanley Cup finals between Las Vegas and Raleigh, North Carolina that Las Vegas won 5 to 4.


Then Suzette went to bed and I stayed up to watch Castle Impossible at 10:00.


Deb Haaland won the Democratic primary for Governor. Perhaps she will be the first Indian female governor in the US.

June 1, 2026 Breakfast - Pain au Chocolate Lunch - Enchiladas at Tiny Grocer Dinner - Baked Lemon Tarragon Chicken Thighs with Blanched Snow Peas and Fava Beans and Butternut squash Mashed Potatoes


I woke up at 4:00 and went back to sleep at 5:30 and slept until 7:15. Just in time to watch the market open down.


I then helped Suzette pick peas in the garden. This has been a great year for peas. We have been eating them for days with lots yet to come.


I spent the morning at my desk working on family finances, doctor appointments, and reading the recent Settlement in the Texas v. New Mexico U.S. Supreme Court case.


Then at 11:30 after Nvidia started to move up, I called Willy to see if he wanted to go to lunch. He walked over and we drove to Old Town to eat at the Tiny Grocer that Willy highly recommended. We both ordered enchiladas with beef and red chili. Although a bit expensive at $18.00 the enchiladas were gourmet quality with fresh local ingredients and a thick picante, clumpy red chili sauce that tasted liked had been cooked forever and the enchiladas had been baked in an oven to order, which are my favorite way for them to be prepared. 






We could only eat 1/2 of the large portion, so we each took a box home for a later meal.


I drove Willy back to work and then went home and read some more of the settlement until 1:45 when I watched the market close and after market coverage ubtil 2:30 when I checked my portfolio. Today’s market was choppy with lots of stocks dropping precipitously, but several going up a lot, like ARM and Nvidia going up $13.22. Thanks to the three strong gainers, my portfolio increased by 1% to a new high as did all the averages.


At 3:15 I walked around the block, which allowed me to accumulate over 3700 steps today.


Soon after I returned and lay down, Suzette arrived. I rested while she cleaned the kitchen, although I cleaned a skillet and two pots.


We then shucked peas for dinner and a future pea soup and extra for future meals. We also shucked the rest of the faca beans.


We decided to bake the chicken thighs I bought several days ago and season them with slices of lemon and sprigs of tarragon from our garden slid under their skin. We decided to serve them with a mixture of mashed potato and butternut squash and blanched fava beans with some of the snow peas.


Willy came over to join us for dinner around 7:00 as everything was finishing cooking.


I opened a bottle of 2022 La Granja Viura and Verdejo blend that is one of my favorites with baked chicken and poured glasses for each of us.  Suzette plated our plates with peas, mashed butternut squash potatoes and a chicken thighs I bought and we took them to the table under the gazebo in the garden.





At 7:15 it was starting to cool, so dinner was pleasant. We went back in at 8:00 and began watching Texas Tech women’s baseball team play Alabama in the semi-finals of the Women’s College World Series. Texas Tech won and will play Texas for the championship on Wednesday.


During the game we sipped cognacs and I ate two squares of Belgium milk chocolate.


Another excellent day of interesting food.

When the game ended at 9:30 we went to bed
