February 17, 2022 Lunch - Posole with a cheese quesadilla Dinner - Baked Stuffed acorn squash and baked apple
It snowed this morning so Suzette worked from home.
We thawed a 32 oz. Container of frozen Posole and Suzette made a cheese quesadilla for lunch. I added lemon juice, avocado cubes, oregano, and 3 oz. of diced onion to my Posole and Suzette added avocado and sour cream to hers. We both drank Dos Equis beers.
Suzette thawed two Italian sweet sausages and wanted to stuff the acorn squash I bought yesterday. She baked the squash and then cut it in half and stuffed each half with a stuffing combining sausage, couscous, béchamel sauce, and sautéed mushrooms . Suzette baked apples cut in half, stuffed with honey and raisins.
Both were delicious. I could not stop eating.
We opened a bottle of Chianti Riserva for dinner.
Later I ate some pistachio almond ice cream for dessert and several chocolate chip cookies and tea.
