February 16, 2022, Lunch - Salad and cheese sandwiches Dinner - Lamb Shank with asparagus and onion couscous with Tzatziki
I worked from 5:00 until 6:30 and then watched the news. The threat of war is not good for the Market. Today my portfolio suffered a small set back
For lunch I made a salad and toasted two slices of baguette and melted slices of Jarlsberg cheese to make cheese sandwiches.
I napped after lunch until 3:30 and then went to the bank and El Super to replenish the larder. MI bought broccoli, a cauliflower, yellow and red onions, a papaya, a pineapple, oranges, Granny Smith apples, 4 mangos, lemons, tomatoes, a can of prepared pinto beans, milk, a large acorn squash, cilantro, parsley, green onions, plain yogurt, cabbage, celery, carrots, and zucchini all for $39.00.
I was tired when I returned home and Suzette had to unload the car.
We decided to make a simple dinner.
We microwaved a prepared lamb shank we had bought at Costco for $20.00 for two prepared shanks that produced 6 portions. We also made couscous with diced asparagus and red onion and I made Tzatziki with diced tomato and red onion.
Suzette chose a bottle of Kirkland Gigondas. It was an amazing bottle, rich and yet smooth.
The dinner was wonderful and there were leftovers for another meal.
