September 11, 2020 Lunch – Pork Stew with Tomatillo Sauce, tortillas, and cheese. Dinner – PPI Red Snapper, Butternut Squash with Pinon nuts and Raisins and Spinach in a cream sauce

 September 11, 2020 Lunch – Pork Stew with Tomatillo Sauce, tortillas, and cheese. Dinner – PPI Red Snapper, Butternut Squash with Pinon nuts and Raisins and Spinach in a cream sauce 

Oddly, today’s best meal was lunch for both of us.

I ate granola, milk, yogurt, and melon and blueberries for breakfast as I watched an exciting stage of the Tour de France with a real battle on a huge mountain finish with a 15% gradient at the top.  Dani Martinez won the stage against two young German riders from the Bora team in a break away and then 7:00 minutes later when the Peleton came to the finish the two Slovakian riders took the best



times and went into 1st and 2nd place in the GC, finishing 40 seconds faster than last year’s winner, Bernal, who dropped from second to third.

I worked for a while and at 11:30 Mario came to install motion detectors and connect the alarm system to the monitoring service.

Lunch 

At 1:30 I decided to eat the PPI Pork and bean stew for a quick and easy lunch. I lay five halves of corn tortillas in the bottom of a pasta bowl and covered the tortillas with pork and Bean stew and added extra Tomatillo sauce and a handful of cheese and heated the dish covered with Saran in the microwave.  It was really delicious and filling lunch.


It took Mario until 4:00 to try to get the system connected because one of the features on the new relay was not functioning. We now have a well monitored and alarmed system. 

I ate a chocolate chip cookie and lay down at 4:15 and rested for a few minutes until Suzette arrived around 5:00.  She had also eaten a hardy lunch of chicken and Squash casserole, so we waited until about 6:30 to re-heat the PPI Red Snapper, Squash, and Spinach dish and sauté some fresh string beans.



Chicken Salad

Before dinner we made chicken salad.  Suzette went to the garden and picked a basket full of basil and de-stemmed a handful of leaves and   blended them with mayonnaise to make basil mayonnaise.  I diced three stalks of celery, ½ of a red onion, two hard boiled eggs and a chicken breast and a Suzette added the basil mayo, lemon juice and a dash of salt.

Because we had both eaten heavy lunches late, neither of us was hungry enough to finish dinner, so I put most of it back into its container.

Later I ate a bowl of Java chocolate Chip ice cream with Suzette’s maraschino cherries and a dash of Kahlua with a cup of chai and Suzette ate a chocolate chip cookie as we watched a Hallmark style movie named Guaranteed Love and went to bed at 10:15.
