February 25, 2023 Brunch - Lax and Bagel. Snack - PPI Gyros and rice and Tahini Salad. Dinner - Vegetarian Eggplant Parmigiana with Sweet Potato slices


Today we worked and ate well. 


I finished the draft of a pleading from 8:30 to 10:30.


Suzette left at 8:00 to buy bagels at Kaufman’s bagels and delivered them to the bistro and then returned at 10:30.  The Bistro is featuring a lax and bagel for breakfast on the weekends.  We think Kaufman’s makes the best bagel. I noticed it had a crisp outer crust and the inside was firm, not fluffy.


I sliced red onion, lax, and spread cream cheese and garnished with capers. Suzette added slices of tomato.




After brunch I watched soccer and Suzette worked in her office after brunch.


I heated up the leftover gyro and rice and a pita that I stuffed with the tahini salad at 2:00.  It still tasted remarkably good after a week in the fridge.




At 3:30 we started cooking dinner.  Suzette peeled six Roma tomatoes and I diced them plus a small onion and minced four cloves of garlic and sliced six mushrooms that Suzette combined with a can of tomato paste and a handful of dried oregano into a tomato sauce after simmering for 1 1/2 hours.








She then grilled slices of eggplant on the propane grill and interspersed slices of mozzarella, slices of baked sweet potato, and slices of grilled eggplant in a baking dish and covered it with the fresh tomato sauce and dusted with grated Parmesan cheese and baked in a 350 degree. Oven for 25 minutes.


She boiled spaghetti and served two or three slices of eggplant and sweet potato with sauce on a pile of Spaghetti. We liked the fresh clean flavor of a purely vegetarian dish.


We opened another birthday wine, a 2017 Unanime gran Tinto from Argentina produced both Mascota Vineyards.





We watched an amazing movie written and starring Jonah Hill titled Our People about a Jewish guy who falls in love with a black woman.  Eddie Murphy plays the father of the black girl and Julia Dreyfus’s plays the mother of the Jonah Hill character.


After the movie I made a cup of chai and filled a sipper with some cognac and ate one of the triple mousse pastries we bought at Le Quiche on Wednesday.



We watched another movie titled Your Place of Mine with Reese Witherspoon and Ashton Kushner that was not as good.  Suzette went bed at 11:0 and I stayed up to blog and watch a newly discovered film of Jim’s Hendrix’ July 4th, 1970 concert in Atlanta.
