February 13, 2033 Breakfast - Two Fried Eggs, a sausage patty, and three toasted slices of baguette. Lunch - 2000 Vietnam No. 31, Bun Cha Gio. Dinner - Cedar Board Grilled Teriyaki Salmon with Rice and Broccoli

February 13, 2033 Breakfast - Two Fried Eggs, a sausage patty, and three toasted slices of baguette. Lunch - 2000 Vietnam No. 31, Bun Cha Gio. Dinner - Cedar Board Grilled Teriyaki Salmon with Rice and Broccoli 


We woke up at 6:00 this morning.  Suzette needed to attend a meeting at 8:30 so we went to the kitchen and heated 1/4 cup each of soy, mirin, and sake plus 1 T. of sugar to make the teriyaki sauce.


We then turned our attention to the filet of salmon.  We cut two slices of belly meat to fit into a Pyrex loaf baking dish and then made 1 recipe of Gravad lax curing seasoning plus added the zest of two oranges to the mix because we did not have any fresh dill.  We quickly sprinkled the mixture on the four sides of the two filets and lay them in the baking dish.  Suzette then covered the baking dish and pressed the filets down with a brick and took the dish to the garage fridge to start its curing process.


By the time the Gravad lax was placed in the garage the teriyaki sauce had cooled enough to pour into the gallon freezer bag in which we had placed the remaining salmon filet.


Then the freezer bag was sealed and placed in the fridge to marinate the salmon with teriyaki sauce.


Suzette then fried two eggs and a slice of pork sausage and toasted three slices of baguette with a cup of tea for my breakfast before she left for work.




After breakfast I had a long talk with Robert about the two litigation cases I am involved in and then drafted a letter to the attorney in one of the cases.


At 12:30 Fernando arrived to inspect the windows that Vince had repaired and soon thereafter Henry arrived with the tile to lay in the front bathroom. Fernando and Henry knew each other and I was privy to their amazing conversation about all the people they knew for 1 1/2 hours while. Listened and watched the Liverpool v. Everton Darby.1:30.when Angelo , my newly designated PT instructor arrived. 


We did physical therapy for 1/2 hour with three new exercises, which tired me.


Angelo left around. 2:15 and shortly thereafter at 2:30 Willy arrived with two No. 31’s he had fetched from 2000 Vietnam. I  remembered the No. wrongly and instead of fried egg rolls and grilled marinated pork there were only three Vietnamese fried egg rolls instead of two egg rolls plus grilled pork.  Willy mentioned that this error may have occurred because the management had changed and did not know that we usually order what is now numbered 32.


Alas, the egg rolls, steamed rice noodles, and lettuce and mung bean sprouts were fabulous, so no regrets.



When Willy left at 4:00 I mentioned we were having teriyaki salmon for dinner and invited him to join us.


I crawled into bed to rest and Suzette arrived around 4:30 and Virginia, my new Occupational Therapist arrived a bit after. 5:00. She checked all the areas I did things and tested my strength and recommended installing a grab bar at the entrance to the shower to stabilize my entry and exit. For a bit longer than 1/2 hour.  I am thankful Dr. Mulkey ordered in home PT, OT, and nursing care, to relieve us the burden of driving to a central facility.


At 6:00 we started cooking dinner.  Suzette first made 1 cup of rice by boiling it in 2 cups of water seasoned with 1 tsp. of Knorr dehydrated chicken broth for 30 minutes on the lowest heat.


Suzette then did major surgery on a head of broccoli to salvage a handful of chopped flowerets that she added to the boiling rice when there was ten minutes left to cook.


Suzette then laid the marinated salmon on  two 1 by six inch cedar planks she had soaked in water for an hour and placed it on the grill when 15 minutes remained to cook the rice.


Willy arrived a few minutes before 7:00 as Suzette was removing the grilled salmon from the propane grill located on our back patio. One thing I noticed tonight is that the marinade creates a glaze on the salmon filet as it is grilled.


Willy made us cups of tea and Suzette laid a slice of grilled salmon on a pile of rice mixed with broccoli for a lovely dinner.



We watched the Antiques Roadshow until 8:00 when Willy left and then we went to bed to watch the second hour but I fell asleep until 9:30.


I got up and took my pills and waited for Rachel Maddow at. 10:00 but she was pre-empted by reports of the active shooter on the Michigan State campus.


Also, I finally had a good day in the market with an approximately 1.5% increase in my portfolio putting me a bit more than halfway from my low earlier this year to the starting point level at the beginning of 2021.


We will do a two day cure on the Gravad lax by flipping the filets tomorrow morning and curing for one more day.
