August 8, 2021 Lunch - cold teriyaki salmon and Fruit cobbler. Dinner - Stir Fried Teriyaki Salmon with Asparagus, Musrooms, green onions, and radishes.
We woke up at 6:30. We took a 1/2 mile walk on the lava flow trail and then drove to Raton, where we bought breakfast at McDonald’s, a burrito for me and a sausage and a large coffee and egg biscuit for Suzette. Both were so flavorless they were hard to eat and they were terribly doughy but filling.
We then drove south on I-25 to the Castenada Hotel Las Vegas. We arrived a few minutes before noon and found out the restaurant served only take out starting at noon, so we returned to the van and each ate three of four bites of each. It was a better lunch than we could have been served by take out at the Hotel and very much in the spirit of Fred Harvey, a very quick meal so we could get back on the road immediately.
We then drove home by way of Rio Rancho to return some parts borrowed from Tom Eichhorst and gas up at the west side Costco.
We were tired when we returned home. I lay down after we unloaded the food. At 5:30 Suzette was hungry so we fixed dinner. It was a rerun of the dinner we did not eat last night, a stir fry of the PPI teriyaki salmon with sliced green onions, three radishes, two large white mushroom sliced, and sectioned asparaguses. Suzette made an Chinese seasoning sauce with soy, rice vinegar, Chinese cooking wine, and a bit of sugar and salt. We also boiled the rice sticks noodles we had taken with us and were pleased that they cooked fully in ten to fifteen minutes. We divided the noodles between two bowls and i doused them with sesame oil and Suzette tossed them to coat them with oil and then spooned the salmon and vegetable mixture over them. I opened the bottle of 2012 Gran Reserva Origon from terra Alta in southern Catalan.p ($5.99 at Trader Joe’s). It is very smooth and drinkable and a bargain.
Later we tried to draw dimensions of the bath room but Suzette faded and went to bed.
I ate a bowl of Coffee, almond, fudge ice cream with a dash of Kahlua and chocolate syrup and watched Unforgotten and Professor T on PBS and then blogged and went to bed.
It was a quiet end to a busy weekend.
A large limb fell from our large cottonwood tree in the front yard so I will need to find an arborist tomorrow.
