August 2, 2021 Lunch - Artichoke and Enchiladas. Dinner - Chicken And Corn Soup and Garlic Bread

I ate no breakfast, so I ate an artichoke and a container of PPI Enchiladas for lunch around 11:30.

Every day brings a new amazing surprise in the market.  Today it was the announcement by Square that it had agreed to merge with Payback, an Australian Company that lends money to people so they can buy things with 16 million members by paying the retailer 25% down and financing the balance with Payback by paying off the 75% balance in 4 payments over six weeks.  A failure to make timely payment cancels the credit card until the payments are brought current.  For a while Square was up $31.00 but it closed up $20.00. My portfolio increased by .75%.

My Dad always said to bet on the best horse because they statistically win more often, so continuously outperform. The same seems to be true of companies.  You never know what will happen but great innovative companies like Square, Apple, and Moderna find ways to continue to succeed.

Dee returned around noon and we watched the news and Olympics until Suzette came home.  We have made three soups recently, so we would have dishes ready to eat without cooking.  Also, Suzette brought a box of tomatoes several days ago that we have been enjoying every day.

Tonight was no exception.  We heated the Chicken and Corn Soup and ate it with fresh sliced tomatoes with a dab of basil mayonnaise and I made garlic toast to eat with the soup.

We drank the new Sauvignon Blanc we bought at Trader Joe’s for $5.49 that we love.

Bon Appetit
