July 10, 2021 Lunch - PPI Posole with enchiladas. Dinner - PPI Chicken with Ratatouille and Rice
I awakened early and watched the Tour and ate a Gravad lax sandwich. Then i went to the garden at 9:00. Suzette had alreplanted the ten plants she had bought.
Herbs du Simon
We took four screens out to the garden. I filled one with tarragon and another with oregano, while Suzette filled one of hers with lavender and the other with rosemary.
The plan is to dry the herbs and make an Herbs du Provence mixture.
Here are the screens drying in the garage and a photo of the garden.

After we stored the herbs in the garage to dry Suzette left to shop for hardware including a new connection for the waste water discharge from our clothes washing machine into the garden.
I watched the finish of Stage 14 of the Tour de France. This year for some reason big strong Dutch and Belgium riders instead of the small lighter Columbian riders are winning the mountain stages. Today was no exception a big Dutchman named Mollema won the stage that included lots of climbs.
I then read a Britannea article on Machiavelli with a summary of The Prince that laid out the main themes and life stories of the main characters referenced as examples of categories of types of princes by Machiavelli. Then I read some more of The Prince and understood it much better
When Suzette returned at noon we heated PPI enchiladas and I heated a bowl of Posole with some enchiladas and we ate a hardy lunch washed down with a Dos Equis.
I think we both rested until 5:00 after lunch. We often catch up on our rest on the weekends.
When we awakened we were not hungry but I brought in the ratatouille and after awhile we decided to make a light dinner of the PPI Roasted Chicken wing quarter Suzette had brought home from the Bistro with the Posole I ate at lunch and a piece of Challah (egg bread).
Suzette heated the rest of the rice with the chicken and a few spoonfuls of ratatouille in a Saran covered Pyrex loaf pan the microwave and I opened a bottle of Kirkland Pinot Grigio ($4.99 at Costco). We were very satisfied with the light hot dinner and there was enough chicken and rice left for another meal after I added a few more spoonfuls of ratatouille.

After dinner we watched the last two or three episodes of Lupin, which we enjoyed very much and then went to bed because we had planned an early departure for Andy’s Memorial service In Amarillo Sunday morning.
Bon Appetit
