May 9, 2025 A Sick Day Breakfast - Toast Lunch - Fried Rice. Dinner - Sautéed Salmon fillet with Steamed Broccoli and Roasted Potatoes with Mint
I threw up the first antibiotic I took without food in the morning. Suzette I should have taken the pill with food but it needed to be very mild food like a piece of toast. So I toasted two slices of baguette and spread the last of the plum preserves we were given two years ago at the winery in Portugal on them and drank a cup of green tea with them.
Then I took another pill and ate another slice of toasted baguette, which worked.
At noon I became hungry. I decided to make fried rice with the remaining red rice, pecans, and chicken. I quartered five slices of zucchini, minced two slices of onion, sliced a stalk of celery in half lengthwise and then into 1 inch sticks, six snow peas destemmed an cut in half, and minced three cloves of garlic and an equal amount of fresh ginger root plus a few slices of cooked pork diced.
I whisked two eggs with 1 T. each of soy sauce and rice cooking wine
I then heated 2 T. of peanut in the wok and cooked all the ingredients except for the snow peas and pork, which I added with the leftover red rice after a few minutes. Then after a couple more minutes when all the ingredients seemed to be hot I added the egg mixture and let the ingredients cook for a few minutes until the mixture was browned on the bottom. I flipped the thick now firm fried rice paddy and cooked it on the other side for a minute and then filled a plate with most of the fried rice and ate it with a glass of water.
After lunch I rested and read a Saul Bellow novella for book club.
Suzette came home around 1:00 and ate the rest of the fried rice and the last of the chicken salad for lunch.
I spent most of the afternoon and early coughing up crud from my lungs and sinuses as the doxycycline fought to kill whatever bad bug had infected me.
Things began to return to normal in the evening and when Suzette asked what I wanted for dinner, I answered, “Sautéed salmon and steamed broccoli.” Suzette suggested we eat that with some of the leftover minted roasted potatoes.
I also asked for a glass of the new Cotes De Provence Rose I had bought at Costco yesterday, which I drank while I watched the news, mostly about the selection of the first North American born pope.
At round 7:30 Suzette called me to dinner of a sautéed salmon filet, steamed broccoli, and re-heated Roasted minted potatoes plus tartare sauce. I poured us glasses of rose’ and we had a lovely dinner.
After dinner I took another antibiotic with two slices of fruit cake.
After dinner we watched Washington Week at 8:00 and then a Netflix movie titled “Dad Quest” and then went to bed.
I woke up at 1:00 and drank several glasses of water, which helped to flush my lungs of more crud.
