May 15, 2025 Lunch - Chirashi. Dinner - Lamb Pita Sandwiches


Today I was at home most of the day until 5:30 when Suzette and I walked around the block.


I ate granola for breakfast.


I then made Gravad lax  and cut and froze salmon steaks.


Then at 1:00 I cooked a cup of sushi rice. Sushi seasoning is easy. I just add 2 1/2 T. of rice vinegar, 2 T. of granulated sugar, 1/2 tsp. of dehydrated dashi,  and 1 T. of Mirin to 2 cups of water and add 1 cup of jasmine rice to the boiling water, cover the pot, reduce the temperature to the lowest setting and simmer the rice for 30 minutes.


I cut a 5 oz. Aji tuna steak, three sea scallops, and the end pieces of salmon I bought yesterday at Smith’s and peeled, seeded and sliced 1/3 cucumber.


I made a cup of green tea and fetched the jar of pickled ginger and the jar of pickled daikon and Korean basil and filled a dipping bowl with soy and wasabi. I filled a rice bowl with warm sushi rice and ate a fabulous lunch. I could not finish the pile of fish and put the plate with the dipping sauce in the fridge for Suzette to eat when she arrived home at 4:30.


After we walked at 5:30 and watched the news, we made a quick dinner by utilizing the leftover tzatziki and tomato, lettuce, onion, sour cream and mayo salad to fill toasted pita pockets along with reheated sliced grilled lamb, creamy feta, and lettuce.


We drank Spanish Rioja Reserva from Costco. I watched Denver v. Oklahoma City in the NBA playoffs and then fell into bed.
