May 7, 2025 Breakfast - Granola. Lunch - Chicken Salad Salad and Melted Cheese Sandwich. Dinner - Grilled Lamb Chop and Asparagus with Roasted Potatoes with mint and Tzatziki

May 7, 2025 Breakfast - Granola. Lunch - Chicken Salad Salad and Melted Cheese Sandwich. Dinner - Grilled Lamb Chop and Asparagus with Roasted Potatoes with mint and Tzatziki


I ate a late breakfast of granola with milk,mango yogurt, and blueberries.


 I filed the appeal in the Water case.p at 1:30 and then made another Chicken Salad Salad forLunch with cucumber, green onion, Oaxaca string cheese, a diced Roma tomato, and Chicken Salad. I made the same patron vinegar and olive oil dressing but with the regular olive oil and toasted slices of baguette and melted Jarlsberg cheese slices on them. I drank water.



I also made tzatziki using patron vinegar instead of lemon juice, plus some diced tomatoes and minced onion


I am beginning to feel better.


At 5:00 I walked to the CountryClub and back to help accumulate 3200 steps today.

Suzette came home at 4:00.


At 5:30 she started cooking. She roasted one of the pork tenders and roasted quartered russet potatoes with salt.


She then grilled the lamb chops and some asparagus. 







We opened a bottle of 2022 Chateau de Thau from Cotes du Bourg that was a $20.00 bottle rated 4.1, 3.9, and 91 points. It was 80% Merlot and 20% Cabernet Sauvignon, it was exceedingly smooth and help up over two hours as we sipped after dinner.  I highly recommend this wine.


We watched a Korean film and then the third period of the first game between Dallas and Winnipeg that Dallas won in the quarter finals of the Stanley Cup playoffs and went to bed around 10:30.
