May 23, 2025 Breakfast - bagel and Gravad lax. Lunch - Oysters and Asparagus Vichyssoise with Mike. Dinner - Calabacitas with ham.
It was a more normal day today. I toasted two slices of a Lander’s bagel and smeared it with cream cheese and garnished it with sliced red onion Gravad lax and capers and drank a cup of tea for breakfast.
I then took my antibiotic with a chocolate croissant.
I reviewed loan documents until noon and obtained certificates of good standing from the Secretary of State’s on line system after a bit of a struggle and a call for help.
I spoke to Mike and he and Suzette and I planned a lunch. I ordered and he picked up 4 dozen oysters on the half shell on ice at Whole Foods and brought them to our house. There were a dozen of each of Rochambeau, Spanish, Bluepoints and Wellfleet, each in its separate plastic container. Since we were three we each ate four of each oyster.
Suzette made cocktail sauce and fetched the horseradish infused vodka she made and the Padron flavored Spanish white wine vinegar, filled bowls with the last of the Asparagus Vichyssoise and set the table under the gazebo. I opened the bottle of Albariño. Fetched the saltine crackers, and sliced about a dozen chives. Then, when Mike arrived we poured glasses of Albariño and carried all the food to the table in the garden.
The roses, sage, a water lily, and Columbines are blooming so the garden was very pretty.
I was amazed at how clean tasting both the oysters and wine tasted. When oysters are really fresh they have a very clean fresh taste and the Albariño that was rated at 93 points also had a very clean taste, as if it had been aged on the leas. We added cocktail sauce and vodka to some and wine vinegar to other oysters. I liked the combination of cocktail sauce and horseradish vodka best because the vodka emulsified the cocktail sauce into a creamy sauce.
After lunch I picked the three Mr. Lincoln roses and helped Mike pick herba. Suzette was tired and lay down for a 2 hour nap.
Also Jody came yesterday and picked up Willy’s car and brought it back today and picked up the Prius and replaced one of its small batteries that starts the car.
So we now have three drivable cars again.
At 5:00 a made Calabacitas with ham. I sliced two zucchinis, four yellow squash, a pasilla chili, and half of the ham steak I bought last week and cut the kernels of two ears of corn and cooked the mixture for an hour in the large casserole.p with two cups of water and two T. of butter.
I then ate two bowl, one plain and one with cilantro, sour cream and a pinch of salt. Both were equally delicious. The consistency was somewhere between a stew and a soup due to the extra quantity of liquid. I loved everything about it.
After dinner I took my pill and sandwiched it with a couple of cookies.
Suzette ate a bowl at 7:30 as we watched the Edmonton Oilers beat the Dallas Stars to tie their Western final series at one game each.
At 8:00 we called Willy and spoke to him for and hour and the Suzette went to bed and I blogged this entry.
