May 25, 2025 Brunch - Blueberry Pancakes with Maple Syrup and Bacon snack - Avocado Toast. Dinner - Stir Fried Beef, Broccoli, Yellow Squash, mushrooms, Asparagus, and onion

May 25, 2025 Brunch - Blueberry Pancakes with Maple Syrup and Bacon  snack - Avocado Toast. Dinner - Stir Fried Beef, Broccoli, Yellow Squash, mushrooms, Asparagus, and onion


I woke up at 6:30 and worked until 8:00 when I watched Fareed Zacharia and then watched Liverpool tie Crystal Palace. This was the last day of the season and all teams played at the same time. Liverpool weee the champions this year.


At 10:30 Suzette made blueberry pancakes and we fried four slices of thick bacon and we ate pancakes doused with warmed maple syrup and bacon.



Then we worked in the yard.  We dug up two plants and planted lemon thyme and lilies where the had been.



At 2:00 we took a break and Suzette toasted baguette and smeared the toast with avocado for a snack.


Then we planted more thyme. I worked at my desk and then I helped Suzette  plant two planters in the back of the garden.


Carlos came today with a helper to paint the picket fence which really needs painting because the old paint is starting to peel.


At 4:00 I walked around the block and  finally felt better after exercising.


At 6:00 I started dinner. I minced ginger and garlic and diced 1/2 onion, cut the flowerets off a head of broccoli, a sliced a yellow squash into one bowl sliced asparagus and three portobello mushrooms into another bowl about 1 lb. of PPI grilled rib steak sliced.


I then made a seasoning sauce with soy, oyster sauce, Chinese Cooking wine, sesame oil, cornstarch, water, and a tsp. of sugar and 1/2 tsp. of salt.


I then heated two T. of peanut oil in my wok and sautéed the garlic and ginger and in a minute added the broccoli, onion, and squash and covered and steamed them stirring occasionally. After about five minutes I added the mushrooms and asparagus and stir fried all the ingredients for about another 2 or 3 minutes.


Then I added the beef slices and after another minute added the seasoning sauce which soon congealed so I add 1/2 cup of water to loosen the sauce and the heated some PPI sushi rice in the microwave for 1 minute and 23 seconds.



I called to Suzette and we each served ourselves rice and Beef Stir fry and Suzette poured out the last two glasses of Rioja Reserva from Costco and we ate a great dinner.


The brown sauce was perfect coating the ingredients but not runny or too globby.


Later I ate the last piece of Clementine cake as we watched Impossible  Chateau about a young couple who fix up an old French Chateau.


I went to bed after NY Knicks beat the Indiana Pacers by 6 points around 9:00.


This was a good day with lots of interesting activities and only 2 meals and a healthy snack.
