May 27, 2025 A Great all fish day. Breakfast - Fried eggs omelet with sautéed onion and Grouper. Lunch - Leftover Chirashi Dinner - Grilled whole Rock Cod stuffed with shallot and Asparagus and Tomato and onion Couscous

May 27, 2025 A Great all fish day.   Breakfast - Fried eggs omelet with sautéed onion and Grouper. Lunch - Leftover Chirashi  Dinner - Grilled whole Rock Cod stuffed with shallot and Asparagus and Tomato and onion Couscous

I awakened at 7:15 and got dressed.


I made an unusual breakfast. I sautéed a slice of onion and the three leftover cottage fried potato slices from last night’s dinner. Then I added a handful of the PPI grilled grouper from last night’s dinner and when everything was heated I added two whole eggs. The result was a round single layer of all the ingredients fused together by the eggs. I toasted, buttered, and spread French fruit preserves on three slices of baguette. I made a cup of Earl Grey tea and took my last antibiotic in the middle of this hardy meal.




It was lucky I ate a good sized breakfast because I did not return home until after 2:00.


After breakfast I finished the Asset Stale Agreement and sent it to my client by 11:30 and then drove to my dental appointment. I was amazed that the regimen suggested by the dentist seems to be working I have less gum recession than six months ago.


I was feeling a lot better today, so after the dentist I went into overdrive and did my appointed errands for the day.


I first stopped at Qud’s Mediterranean Market and bought a large can of dolmas, two pounds of ground lamb, and a bag of six pita.


I then drove to RWD building supplies at 701 Comanche and bought 80 ridge caps shakes and a bundle of heavy shakes for Carlos to repair the roof.


Carlos had agreed to spray the roof with Brazilian Penofin oil, but RWD did not offer it. I remembered buying it from Hunter Lumber, so I called and they told me they still sell it so I drove to Hunter Lumber and bought their last 12 gallons.


Then I remembered that I needed to buy milk so on the way home I stopped at Lowe’s and bought a gallon of milk, a 2 liter bottle of tonic water, and a packet of oatmeal cookies on sale for $1.29.


When I returned home at around 2:15 I soaked a cup of No. 1 bulgur in hot water to start the process of making tabouli. I put up the food  and took the leftover chirashi from the fridge and turned on the TV to CNBC and confirmed that the market had a monster day.  My portfolio was up more than 2.5% and it finally has made it out of the pain level. I liked the leftover chirashi as much as the fresh bowl yesterday.



The main reason for the Market’s euphoria was Trump deferred the 50% tariffs he levied on the EU, but another interesting change was the Administration  adopted new regulations that will ease the development of nuclear energy and the Oklo stock I bought recently jumped and is now up 58.6% from where I bought it, so a nice surprise.


I then worked on a Bill of Sale and Promissory note for my asset sale transaction and talked to one of the clients.


At 5:30 I helped Suzette fix dinner.


We decided to stuff the whole rock cod we bought yesterday at Talin with shallot and asparagus and butter.  Suzette also scored the side and slipped slices of lemon into the incisions.


She then clamped the fish into our grilling basket and grilled both sides on the propane grill.



While Suzette was grilling the fish I made tomato and onion couscous. I diced onion and a tomato and sautéed the onion in butter. Then I added the diced tomato and z’afar and a Tsp. of harissa. I then added 1 cup of Couscous and stirred all the ingredients a minute or two and then added 1 1/2 cups of boiling water, put the lid on the pot, and reduced the heat slightly. After another couple of minutes I turned the heat down to law and in another couple of minutes turned off the heat and let the couscous steam.



When Suzette brought the rock cod in, Suzette spooned a pile of cous cous onto two plates and flipped the fish onto the cutting board and I placed 1/2 of the exposed top on the couscous and some of the asparagus and shallots.







Suzette fetched a bottle of Le Ferme Julien rose’ from the garage fridge and we ate a really good dinner.


I then watched Finding Your Roots after which Suzette went to bed.


I stayed up to finish the tabouli by dicing two tomatoes, 3/4 of a cucumber, about 8 green onions, 1 1/4 bunches of parsley, 1 cup of mint, juice of 1 1/2 lemons, a tsp. of salt, and 1/2 cup of olive oil, while watched an interesting American Masters episode on the life and work of one of the first and most successful Chinese American artists, Tyrus Wong who mainly worked for movie studios in L.A. He was the lead conceptual cartoonist for Bambi while working at Walt Disney Studio.


He also worked as an artist at Republican Studio and Warner Bros.


He also decorated China and made kites.


At 9:30 I returned to my desk to finish the Bill of Sale and Promissary Note for the Asset Sale.


At  10:30 I went to bed to blog this entry.
