May 6, 2025 Breakfast - Pho with rare beef. Lunch - Chicken Salad Salad. Dinner - Pita pocket Sandwich with Sautéed lamb


Finally I am back on the kind of diet that I am used to.


I had a cup of chai with a Chocolate Croissant at 7:30.  Then at 10:00 I heated the leftover pho from yesterday and added a bundle of Rice vermicelli to increase the noodles. I added a cup of water to rehydrate the noodles. It was delicious with a T. of fresh lime juice.




At 2:00 I made salads for Suzette and me with romaine lettuce, diced Roma tomato, peeled and diced cucumber, black olives, and chicken salad. I made a dressing by combining good La Espanola Spanish olive oil and the artisanal patron wine vinegar.


I also melted slices of fresh Jarlsberg cheese on fresh toasted Costco baguette for a melted cheese sandwich.



It was a lovely lunch but I was hungry again by 8:00, so I sliced the meat of a fresh lamb chop and Suzette sautéed it and I stuffed a toasted 1/2 pita with creamy feta, lamb, and lettuce and tomato for dinner.  Suzette ate lamb with tomato and lettuce, but without pita.


We sipped the last of the bottle of Kirkland Bordeaux Superior with the meal and with chocolate after the meal.


We went to bed at 9:15.


Finding Joy is difficult these days but we continue to try.


A lovely house and good food and wine helps.


We unpacked the 15 bottles of wine we bought in Argentina and stored them in the wine cellar and Suzette told me how she wanted to turn the cellar into a fancy wine cellar like we saw in Mendoza, which made me very happy.


We watched a re-run of Finding your Roots, listened to Carney, the new Prime Minister of Canada, tell President Trump in the Oval Office that Canada was not for sale and never be for sale, and went to bed at 9:15.


We also invited Aaron and Amy for Mother’s Day Lunch.
