May 18, 2025 Brunch - Green Shakshuka. Snack - Morro Bean and Chorizo Stew. Dinner - Asparagus Vichyssoise with salami sandwiches
When I awakened I drank my weekly Latte Machiatta with a heated chocolate croissant and watched PL soccer and news.
Then at 10:00 Suzette wanted to prepare the recipe we saw on American Test Kitchen for Green Shakshuka that is a Mediterranean dish with kale, chard, spinach, and poached eggs. It was elaborate but we had all the ingredients, including sumac, ground coriander and cumin, the three greens, plus parsley, bread crumbs, and eggs.

There was a lot of chopping and blending and lots of ingredients but the result was fantastic. I hope to make it during the summer months when our garden is producing fresh
Then we worked in the yard. We dug a trench around the pond that Suzette will fill with water Irish. Then we cut the dead roses from three of our rose bushes.
At 1:30 I watched Denver play OKC in the NBA quarter-finals. It soon became clear that OKC Thunder was dominate, so I stopped watching when OKC was up by 38 points and started watching Scotty Sheffler in a thrilling match that got close and then he dominated and won by 5 strokes.
At 3:30 Suzette heated the Morro Bean Stew that was served at the Bistro this week with chorizo and we each ate a bowl garnished with crisp tortilla strips, sour cream, and a crumble of cojito cheese.
While I was watching the TV I sliced three leeks and five small russet potatoes and diced about ten asparagus and 1/4 cup of parsley and made Vivhyssoises by cooking those ingredients in 1 1/2 quarts of chicken stock for an hour. Suzette then pureed the soup with an emulsion blender.

I switched to news and at 5:15 I drove to El Super to shop for produce. I bought vine ripe tomatoes, lemons, limes, yellow squash, a Pasilla chili, lettuce, radishes, cilantro, parsley, baking soda, mango yogurt, green beans, Brussels sprouts, Snow peas, red cabbage, avocados, broccoli, and celery.
When I returned home a bit after 6:00 I heated the soup and went to the garden and plucked six stalks of chives and sliced them into thin ringlets. I toasted and buttered three slices of baguette and garnished each with a slice of salami. I then filled a bowl with soup and stirred in a T. of heavy cream and garnished the bowl with chive ringlets. I poured a glass of Cotes du Provence Rose I bought at Costco last week and ate a very pleasant dinner.
We watched game 7 of the NHL Florida Panthers v. The Toronto Maple Leafs until Florida was up 4 to 0.
I took an antibiotic and ate a chocolate cookie to sandwich the pill into food and went to bed and finished the second Saul Bellow novella for book club.
Suzette came to bed and I went to the TV room to blog.
I cannot believe how many different cuisines I ate today. French coffee and a croissant in the morning, then North African Green Shakshuka for brunch, then Mexican bean and chorizo stew for a snack, and French Potage for dinner.
I feel full but happy.
