May 4, 2025 Breakfast - Latte and Chocolate Croissant. Brunch - sausage, potato, and Egg burrito. Dinner - Sautéed chicken, kale, and red rice and raisins.

May 4, 2025 Breakfast - Latte and Chocolate Croissant. Brunch - sausage, potato, and Egg burrito. Dinner - Sautéed chicken, kale, and red rice and raisins. 


Today was spent like most Sundays, watching the news programs, after which we inspected the garden. Many things are growing and the roses are in full bloom, so it looks promising.


We had a hard shower this afternoon, so that will help things along.


I diced a red potato and 1/4 onion and Suzette sautéed sausage, eggs, the potatoes and onion and made burritos for brunch.







After brunch we rested until 3:30 when I drove to El Super to shop. It took two hours and I had to stop and drink a Mexican coke to regain my energy during the process. I bought leeks, red onions, brown onions, carrots, zucchini, snow peas, cucumbers, green onions, parsley, limes, oranges, a papaya, a pineapple, mangos, romaine lettuce, broccoli, Oaxaca string cheese, a pork tamale, sour cream, plain and mango yogurt, asparagus, potatoes, blueberries, an eggplant, and an orange bell pepper. 




When I came home at 5:30 it was in a thunderstorm and I ran inside.


Suzette had defrosted a chicken breast a pond some leftover red rice from the Carmague with raisins and picked some parsley and kale from the garden.


I destemmed the kale leaves and cut the long leaves into strips and diced the parsley and 1/4 of an onion.


Suzette then sautéed the onion and the diced chicken breast and added the rice and finally the kale and parsley for a quick p, healthy, and delicious dinner that we ate with glasses of Benton Lane 2019 rose of Pinot noir.





Later I drank a glass of our homemade limoncello.


We agreed it was wonderful to having a restful day at home, although Suzette stayed busy working, washing dirty clothes from the trip, and adjusting the sprinkler system.
