May 19, 2025 Lunch - Mary and Tito’s Dinner - Leftover Egg Noodles with lamb, mushrooms, and Snow Peas


Today was mostly spent fighting my sinus infection with the new antibiotic.


I ate granola with yogurt, milk, and tropical fruit salad around 9:00 but forgot to take my antibiotic until 10:30, so I lost the true sandwiching effect. I felt uncomfortable around 11, so I ate a chocolate cookie, but that seemed to be too little, too late. I was worried when I drove to Mary and Tito’s at 1:30 to meet Aaron for lunch. Aaron ordered his usual, a stuffed sopapillas with three meats and guacamole and I ordered my usual, flat blue corn enchiladas with beef and an egg.  If I was going down, it would be fighting. I thought about ordering two tacos but decided to go with what I liked.





We talked Earn, which Aaron is innovating rapidly.  Aaron has found one or two new investors also, so my loan may be paid off soon. We talked about marketing and Aaron appreciated my suggestions, and complimented me on my contributions to the company, which made me feel good.


After lunch I went to the post office and had passport photos taken.  Then when I returned home there was a response in the mail from India identifying the two deficiencies in my packet of forms. I think by Wednesday or Thursday I mak have a complete corrected packet.


Bravo!


Then I drove to the bank but Wanda was leaving, so I will need to return to the bank on Wednesday.


At 7:30 while we were watching Antiques Roadshow we discussed dinner and I suggested re-heating the pasta dish from two nights ago with the four kinds of mushrooms, lamb, and snow peas in a cream sauce with steamed asparagus, which is what we ate. 


I snapped twelve asparagus stalks and put them in the steamer with water. While Suzette re-heated the pasta dish in a covered skillet I grated about 2/3 cup of Pecorino-Romano cheese to garnish the dish.


I also poured out the last of the Cotes du Provence rose and we ate a pleasant dinner.



About 1/3 of the way through the pasta dish I took the antibiotic and then finished dinner and even ate a slice of Clementine cake after dinner to sandwich the antibiotic.


It is 10:00 and so far I am not experiencing any discomfort.
