May 30, 2025 Breakfast - Beef and Broccoli with eggs. Lunch - Locro Dinner - Apricot and blueberry cobbler


We are trying to reduce our eating so this morning I heated the leftover Beef and Broccoli stir fry from several nights ago and added some of the rice we made last night and then added two eggs to make one of my favorite meals, stir fried rice and a dish with eggs. Instead of eating all of it I ate only half and put the rest in the plastic container that contained the Beef and Broccoli stir fry.


Suzette picked 4 apricots and some scapes from the garden. Hopefully there will be lots more stuff coming.





I worked until 10:00 when we went to Home Depot to buy wood for Carlos to repair the picket fence.


Then we drove to Costco, where we bought 11 bottles of wine (four Embroidery Pinot Noir, 4 bottles of Faustino AlbariƱo, a Gruner Vetliner, and  2 Gruet Brut), a bottle of Kirkland London Gin, chocolate Croissants on sale, salmon filets on sale, eggs, blueberries, a baguette, and a 24 oz. bag of a new candy (an almond coated with white chocolate and lemincello).


When we returned home around 12:30 Suzette heated the Locro from the Bistro and poured the red chili sauce on it and we ate a great lunch. Suzette drank a Negra Modelo and I drank the last glass of La Ferme Julien rose’. I toasted three slices of baguette that we ate with the Locro.




I then napped until 2:30 when Jody came by to air up the tires on the mini.


I then worked until 4:30 when I joined Suzette to watch the news and a sip a cocktail. I made a gin and tonic and she drank scotch.


At 5:30 I toasted and buttered three slices of baguette and spread brie on them. I opened one of the bottles of Embroidery and poured each of us a glass. It was wonderful, a light Pinot Noir with all the right attributes except for the heavier characteristics of an aged Pinot. But the price was right at $5.99, clearly the best Pinot price in town for something pleasant enough to drink.


At 6:30 Suzette made a jiffy cobbler with some of the fresh blueberries and a bag of apricots from last year’s crop from our garden. At 7:30 Suzette whipped some heavy cream and we ate cobbler with whipped cream for dinner.



We watched a Nicolas Cage movie named Pig and then went to bed at 9:00. I read the new Texas Monthly and blogged this entry and went to bed. The 3rd best BBQ place in Texas is in Fort Worth, Goldee’s. I guess I need to go try it next time I return.

I ate a chocolate croissant and a latte machiatta early.  Then at 11:30 I filled a toasted 1/2 pita with tabouli and creamy feta for a snack.


At 1:15 I drove to HoJo for lunch with Rahim and Nizar and a tour of the first two finished rooms.


Rahim brought Panera’s new sandwich, a take on Croque Madame with cheese bechamel, sliced turkey instead of ham, and sweet peppers between slices of croissant bread that had that distinctive circular embedded in the bread, plus potato chips, a Dr. Pepper, and a cookie after the meal. I liked the chocolate chip cookie.


Then we toured the newly remodeled rooms, one with one California King bed and a larger room with two California King beds.











After the tour I highlighted my comments in a document and then drove home at 4:30. I had trouble talking to Nizar because I wanted to highlight the comments for Rahim.


At 5:00 I checked the market that had been up and down and ended up moderately at the close, resulting in a 1.45% gain for the day.


Suzette came home at 5:30. We discussed stocks and then I found a recipe for Thai Fish Soup.


I chopped ginger and sliced beech mushrooms and asparagus and fetched the red Thai curry and brown sugar, and made 2 cups of chicken stock and opened two cans of coconut milk and fetched the fish and the fish sauce.








We needed rice so I cooked 1 cup of rice adding 1/3 can of coconut milk to give the rice more flavor.


Suzette took over at the stove and sautĆ©ed the ginger, red curry in oil, then added the asparagus and mushrooms and sautĆ©ed them.  She then added the chicken stock and fish sauce and cooked those ingredients for 15 minutes and turned them off and we watched an episode of Midsomer Murders while the rice simmered for 30 minutes.


When the rice was cooked Suzette took over again and added the coconut milk while I minced a small handful of fresh cilantro and cut two small .Mexican limes in half.


We filled our bowls with warm rice and covered it with ladles of soup and zsuzette poured us glasses of chilled Le Ferme Julien rose.


We enjoyed the show as we ate.


Suzette went to bed at 9:30 and I stayed up to watch Foyle’s War until 11:30.

May 28, 2025 Breakfast - chocolate Croissant and a latte Macchiato. Lunch with Suzette at Garcia’s   Dinner at Debbie’s with Melissa and Ruth


We woke at 7:00 and I decided to walk and Suzette said she would join me, so we each drank a latte macchiato and I ate a chocolate croissant and we then walked a mile to the country club and back.  


We worked until 11:30 and then drove to Garcia’s on Central for a New Mexican lunch. Suzette ordered a chili Relleno and a side of sour cream. I ordered a carne adovado plate with double beans and corn tortillas.


We loved our dishes.  We ordered two more corn tortillas and I ate three tortillas filled with carne adovado, beans, and lettuce and onion. Suzette ate two tortillas filled with carne and there was still enough left to take home for a lunch.


We returned home around 12:30 and I worked on the LRGA.  Texas, NM, Colorado, and the U.S. apparently are settling their Supreme Court case over water delivery obligations on the Rio Grande, which may stay the appeal of the U.S. rights in the LRGA.


Then around 1:30 something amazing happened. Apparently President Trump said no AI chips could be exported to China. Nividia stock that was up $2.50 at the time began to fall precipitously and ended down $.69 at the close, as did most other stocks..


Then after the closing bell Nvidia announced its earnings for the first quarter.


It announced a write down of revenue of $4.5 billion to account for the lost revenue from sales of chips to China, but it also reported that its revenue for the quarter was over $44 billion, an increase from $39 billion last quarter and a 70% increase from the first quarter a year ago.


Nvidia stock immediately began to climb and when we went to dinner at 5:45 was up over $5.00. I felt sorry for those people who sold Nvidia at a $.69 loss at the end of the session at the end of that rapid over $3.00 slide.


If that Nvidia gain holds in tomorrow’s trading the three days this week will resemble a roller coaster. Up Tuesday,down Today, and up big tomorrow.


There is no way to predict this market. All one can do is try to enjoy the roller coaster ride.


At 4:30 I meditated and at 5:00 I added some minced parsley to the tabouli to give it some lift.


We the grabbed a bottle of Italian red wine and the tabouli and drove to Debbie’s new house in High Desert. It is a beautiful house with wonderful views of the Sandias.


When we arrived there was a platter of boiled shrimp with cocktail sauce. I opened the 2022 Barbero di Asti wine I bought at Trader Joe’s. It is a light red that goes with almost everything, including boiled shrimp in cocktail sauce.


We toured the house and admitted the view and I watched as Debbie prepared the salami, cheese, and arugula Calzone for dinner.


Debbie also prepared a salad of gourmet green and Italian sweet pepper slices and dressed it with Italian dressing.


Melissa and Ruth were also dinner guests. We talked and nibbled until 9:00 and then we all departed, with the commitment to join together next Tuesday night for dinner at Le Troquet.


We drove home and went bed.


I think I have fully recovered from my illness.

I awakened at 7:15 and got dressed.


I made an unusual breakfast. I sautĆ©ed a slice of onion and the three leftover cottage fried potato slices from last night’s dinner. Then I added a handful of the PPI grilled grouper from last night’s dinner and when everything was heated I added two whole eggs. The result was a round single layer of all the ingredients fused together by the eggs. I toasted, buttered, and spread French fruit preserves on three slices of baguette. I made a cup of Earl Grey tea and took my last antibiotic in the middle of this hardy meal.




It was lucky I ate a good sized breakfast because I did not return home until after 2:00.


After breakfast I finished the Asset Stale Agreement and sent it to my client by 11:30 and then drove to my dental appointment. I was amazed that the regimen suggested by the dentist seems to be working I have less gum recession than six months ago.


I was feeling a lot better today, so after the dentist I went into overdrive and did my appointed errands for the day.


I first stopped at Qud’s Mediterranean Market and bought a large can of dolmas, two pounds of ground lamb, and a bag of six pita.


I then drove to RWD building supplies at 701 Comanche and bought 80 ridge caps shakes and a bundle of heavy shakes for Carlos to repair the roof.


Carlos had agreed to spray the roof with Brazilian Penofin oil, but RWD did not offer it. I remembered buying it from Hunter Lumber, so I called and they told me they still sell it so I drove to Hunter Lumber and bought their last 12 gallons.


Then I remembered that I needed to buy milk so on the way home I stopped at Lowe’s and bought a gallon of milk, a 2 liter bottle of tonic water, and a packet of oatmeal cookies on sale for $1.29.


When I returned home at around 2:15 I soaked a cup of No. 1 bulgur in hot water to start the process of making tabouli. I put up the food  and took the leftover chirashi from the fridge and turned on the TV to CNBC and confirmed that the market had a monster day.  My portfolio was up more than 2.5% and it finally has made it out of the pain level. I liked the leftover chirashi as much as the fresh bowl yesterday.



The main reason for the Market’s euphoria was Trump deferred the 50% tariffs he levied on the EU, but another interesting change was the Administration  adopted new regulations that will ease the development of nuclear energy and the Oklo stock I bought recently jumped and is now up 58.6% from where I bought it, so a nice surprise.


I then worked on a Bill of Sale and Promissory note for my asset sale transaction and talked to one of the clients.


At 5:30 I helped Suzette fix dinner.


We decided to stuff the whole rock cod we bought yesterday at Talin with shallot and asparagus and butter.  Suzette also scored the side and slipped slices of lemon into the incisions.


She then clamped the fish into our grilling basket and grilled both sides on the propane grill.



While Suzette was grilling the fish I made tomato and onion couscous. I diced onion and a tomato and sautĆ©ed the onion in butter. Then I added the diced tomato and z’afar and a Tsp. of harissa. I then added 1 cup of Couscous and stirred all the ingredients a minute or two and then added 1 1/2 cups of boiling water, put the lid on the pot, and reduced the heat slightly. After another couple of minutes I turned the heat down to law and in another couple of minutes turned off the heat and let the couscous steam.



When Suzette brought the rock cod in, Suzette spooned a pile of cous cous onto two plates and flipped the fish onto the cutting board and I placed 1/2 of the exposed top on the couscous and some of the asparagus and shallots.







Suzette fetched a bottle of Le Ferme Julien rose’ from the garage fridge and we ate a really good dinner.


I then watched Finding Your Roots after which Suzette went to bed.


I stayed up to finish the tabouli by dicing two tomatoes, 3/4 of a cucumber, about 8 green onions, 1 1/4 bunches of parsley, 1 cup of mint, juice of 1 1/2 lemons, a tsp. of salt, and 1/2 cup of olive oil, while watched an interesting American Masters episode on the life and work of one of the first and most successful Chinese American artists, Tyrus Wong who mainly worked for movie studios in L.A. He was the lead conceptual cartoonist for Bambi while working at Walt Disney Studio.


He also worked as an artist at Republican Studio and Warner Bros.


He also decorated China and made kites.


At 9:30 I returned to my desk to finish the Bill of Sale and Promissary Note for the Asset Sale.


At  10:30 I went to bed to blog this entry.
