July 12, 2020 Brunch – Pulled Pork in Tomatillo Sauce, Egg, and Potato Burrito Dinner – Vichyssoises and Salad. Dessert – Lemon Lavender Pound Cake with Blueberry Compote

July 12, 2020 Brunch – Pulled Pork in Tomatillo Sauce, Egg, and Potato Burrito  Dinner – Vichyssoises and Salad.  Dessert – Lemon Lavender Pound Cake with Blueberry Compote

I awakened at 8:00 and watched Fareed Zacharia and the Sunday morning news programs until 10:00 when Suzette made open faced burritos with pulled pork in Tomatillo sauce, potatoes, and egg and garnished the dish with avocado slices and sour cream on a toasted flour tortilla.  After brunch I watched PL soccer until  11:00 and then rode 5 miles south and back.  The heat tired me, so I was pleased when Leicester v. Bournemouth came on at noon.  I was surprised that Bournemouth which is one of the worst teams this year defeated Leicester that is currently ranked 3rd in the PL 4 to 1 to avoid relegation.



Luke called at 1:30 and after we disconnected from Like we zoomed with the family from 2:00 to 3:00.

After the Zoom meeting we both showered and I then helped Suzette bottle nine jars of mint jelly.  She had washed the jars and lids in the dishwasher.  Then she went to the garden and picked a handful of mint and boiled the leaves in water to extract its flavor.  She then followed the recipe on the Certo pectin box and added sugar and boiled the mixture for ten minutes and then added the Certo and then poured the mixture into 4 and 8 oz. mason jars.  We then wiped the outside of each jar and sealed the lid on each jar.

I fetched the Vichyssoise from the garage and Suzette fetched about ten chives from the garden that I sliced thinly and garnished the bowls of soup with chive slices.

Before dinner Willy came by to pick up a chicken dinner Suzette had packed for him and a container of Vichyssoises.

At 5:00 I started to make a salad for dinner.  I refreshed the salad dressing with the juice of ½ lemon, some olive oil and ½ clove of garlic sliced.

I then peeled, quartered, and sliced ½ cucumber and cubed a tomato and added organic salad greens and added thin slices of red onion.

Suzette peeled a hard boiled egg and we sliced it and added it and I cubed the last small avocado and added that.  I filled salad bowls with salad and dressed the salads.


We opened and poured glasses of an Argentinian 2002 Santa Maria Vineyards Sauvignon Blanc.  Surprisingly it was still okay.

After dinner Suzette asked if I wanted to try the Bistro and Bakery’s new lemon/lavender pound cake
with a blueberry compote.  She cut two slices of cake and boiled a cup of blueberries in water and sugar for about twenty minutes until the syrup thickened into a thick sauce.


We watched a special on the life of Princess Margaret at 7:00 and then watched our two favorite Sunday night shows, Grantchester and Beecham House at 8:00 and 9:00 and went to bed at 10:00.
