February 9, 2025 Breakfast - Lax on bagels. Lunch - Lamb Pita Pocket Sandwiches Dinner - Leftover Pad Thai with BBQ Shrimp and Asparagus
I slept until 8:45 and then ate two toasted slices of bagel spread with cream cheese and garnished with slices of red onion and Gravad lax that is near its point of decay but still edible and capers with a cup of Earl Grey tea.
We worked on the trip today, exploring activities around Iguazú Falls
Suzette ate baked oatmeal for breakfast and then worked in her office and later cleaned irrigation heads.
I watched news until 11:00 when Mickey and Rebecca called. We talked for over an hour and then I prepared schedule for the tax return for the children’s Trusts.
At 2:30 we made pita sandwiches. I sliced a grilled lamb chop, a Roma tomato, and lettuce. We filled the pockets with these ingredients plus creamy feta and Tzatziki. Suzette drank Albariño and I drank rose.
At 3:30 we walked to the country club and back which led to 4000 total steps.
At 4:30 we started watching the Super Bowl at 4:30. I made a gin and tonic and popped a bag of popcorn as a snack.
It soon became clear that The Eagles had a better Defense than the Chiefs’ offensive line as Mahones was sacked 4 or 5 times in the first half and although the Chiefs began to score in the 4th quarter the score ended 40 to 22.
At 6:00 Suzette sautéed the leftover Pad Thai from lunch Tuesday with cubed BBQ Shrimp and sauce plus 4 stalks of asparagus diced. I fetched beers and we shared a Carlsberg and sliced two green onions for garnish.
We switched to Miss Scarlet at 7:00 and watched a movie on Netflix at 8:00.
At 9:45 we made the bed with clean sheets and Suzette went to bed.
I watched Paris Murders at 10:00 and an episode of Viking history about how they settled England and Ireland at 11:00 and blogged this entry.
It was a restful but reasonably busy day.
