February 10, 2025 Lunch - Thai Taste. Dinner - Broiled Norwegian Mackerel with stir fried Black beans, dirty rice, baby bok Choy, onion, and mushrooms
8:15 was the high point of the day. I woke up at 8:00 and immediately checked the market and saw that all the indices were up with the NASDAQ up over 1%, so I thought my chance to buy ELF was gone. But when I got to the computer I was amazed the ELF was down over a dollar at around $69.50. I immediately bought 250 shares at $69.65 and was pleased that ELF closed at $73.86, which was a good sign.
Of course most of the rest of the market went up today also, so it was a good day for the portfolio as Nvidia continued to recover, climbing $3.73 to $133.57 helping to boost my portfolio 1.22%.
I heated a chocolate croissant and ate it hurriedly with a cup of Earl Grey tea and drove to my 10:00 at 9:40.
I called Aaron and invited him to lunch and found out it was his birthday, so I asked him where did he want to go for lunch. We agreed to meet at Thai spice on Paseo del Norte.
After my 10:00 appointment, I drove to Talin and bought two fresh Norwegian Mackerel and had them filleted, plus a can of smoked oysters, smoked scallops, crab meat, a large bag of vermicelli rice noodles, wheat noodles, German egg noodles, a can of Spanish pimientos, a large can of sesame oil, a daikon, shallots, white birch mushrooms, baby bok Choy, and a lb. of Celtic sea salt for Suzette.
I met around 1:00 Aaron and Monica at Thai Spice on Paseo del Norte. We discussed the menu an decided to order Tom Yum soup with chicken, Spicy Eggplant with mushrooms, carrots, bell pepper, onion, basil leaves and rings of Chinese eggplant, and stir fried spicy ginger fish, again with onion, basil, bell peppers, mushrooms, ginger, and carrots. The sauce were milder in the fish dish. I filled my plate with two piles of rice and spooned each entree onto the rice with lots of sauce to flavor and soften the rice. I ladled soup into each of our small individual bowls. Everything was delicious.
Monica ordered ginger tea and after the meal we shared an order sticky rice on a pool of coconut milk garnished with six slices of fresh ripe mango that was really pleasant.
Since we are three of the five directors of Earn DLT, we discussed its business until after 2:00.
After lunch I went home, arriving at 2:40, with just enough time to put up the groceries before jumping into a zoom teleconference at 3:00.
The teleconference lasted until almost 4:00, when I walked to the bank to deposit a check and back that helped me walk over 3200 steps today.
Suzette wanted me to cook tonight and wanted me to use some black beans in the fridge and squashes. It seemed like a cooking show with designated ingredients that had to be included in the dish. It turned out that Suzette had thrown out the squashes, so I made a stir fry with the black beans, some PPI dirty rice, three baby bok Choy I separated into bite sized white stalks and green leaves, mushrooms, 1/2 onion, three cloves of garlic minced, and about 1 T. of fresh ginger minced, and I then added a seasoning sauce containing soy, Chinese rice cooking wine, sesame oil, cornstarch and water.
Suzette salted and brushed the mackerel filets with olive oil and broiled them in the oven for about 10 to 15 minutes and I minced several stalks of parsley that Suzette used to garnish the mackerel when they were served.
I fetched a bottle of 2023 Claire Patelin Sauvignon Blanc that is my favorite French Sauvignon Blanc value at $6.99 at Trader Joe’s.
We watched two episodes of Antiques Roadshow and sipped the last of our wine. I found it to be a better sipping wine than a food wine, although it was more than adequate as a food wine with its surprising complexity and character.
Later I ate a slice of almond torte with a cup of Earl Grey tea.
Suzette went to bed at 9:00 and I went to bed at 10:00 to blog.
