February 7, 2025 Lunch - Duran’s Pharmacy. Dinner - BBQ Shrimp with dirty Rice and Steamed asparagus.
I watched the market open down and then ate a chocolate croissant with a cup of green tea.
Willy had called last night and discussed buying ELF Beauty, so I sold my shares in P&G, and some Temper Pedic shares, but could not buy zeals until my sales settled which should be Monday.
I also prepared an Operating Agreement for a new client.
I worked with Suzette and Billy on the trip to Argentina and scheduled the payment and expenses for Central for 2024 income taxes.
Tomorrow I will try to do 524 Romero and the Children’s trusts.
My portfolio was up and down most of the day ending down .7%, reversing its three day positive trend.
At 11:30 Robert arrived and I showed him my files and some of the art collection.
At noon we drove to Duran’s for lunch. Robert ordered Huevos Rancheros with red chili and I ordered enchiladas with double beans extra onions and red chili. The initial bite of the chili was mouth watering in a bad way, but then my palate adjusted and I enjoyed the stack of three tortillas smothered in cheese and red chili.
Robert was served a large flour tortilla with his meal, but no corn tortilla under the eggs.
We both drank iced tea and talked about cases.
At about 1:30 Robert drove me home and i was able to watch the market close, which is always anti climatic when you are losing money.
We called Billy and Elaine and tried to book a flight from Salta to Mendoza but failed. We will try again tomorrow.
At 5:30 I walked the long circle which is 3/4 miles that allowed me to walk a total of 4500 steps today. I took a photo at sunset and enjoyed seeing cranes flying North.
Dinner - At 6:00 we began cooking dinner. I made a dirty rice by sautéing pork sausage, onion, and garlic in butter. I then added a cup of rice and the 1/3 cup of dried Middle Eastern broken vermicelli noodle and stirred that mixture until the rice began taking on color. Then I added 2/3 cup of boiling water and then 2 cups of the chicken stock Suzette made earlier this week and brought the rice to a boil and then reduced the heat and simmered the rice for 28 minutes. At the end of 30 minutes, the rice was waterlogged and a bit al dente, so I removed the lid and let it cook uncovered to reduce the liquid and soften.
Suzette cooks Paul Prudhomme’s recipe for BBQ shrimp from his Louisiana Kitchen cookbook. She sautéed the large heads on shrimp in a large casserole with 4 oz. of butter and the spice mixture.
Suzette fetched beers and steamed six asparagus stalks and ate a dinner.
After dinner we watched the news that is looking like a fight for our democracy between the courts and the Trump administration every day, since the Congress will take no action to protect the institutions it created and funded.
We went to bed at 9:00.
Bon Appetit
