February 18, 2024 Lunch - Lamb Pita Sandwiches. Dinner - herring sandwich and Lebanon Bologna and Brie sandwich
I slept until 8:00. I showered and dressed and Suxette put in my compression socks.
At 9:00 I fried a smoked pork chop and two eggs and toasted three small slices of baguette spread with butter and French cherry jam for breakfast.
Then I made a batch of chocolate chip cookies with raisins and toasted pecans
At 10:30 I started working at my desk, where I spent most of the rest of the day until 6:00.
At 1:30 I made two pita pocket sandwiches with slices of lamb, tomato, red onion, lettuce, tabouli, and feta cheese that I drank water with.
At 6:00 we sliced into the fresh Lebanon Bologna that Jean sent us and Suzette sautéed Bologna and brie on baguette sandwiches for dinner.
I also made a herring sandwich on a slice of toasted seeded rye with sour cream and red onion slices sandwich.
I drank hot tea with dinner and at 6:30 meditated until 7:00.
We watched Finding your Roots and at 8:00 I diced the three baked chicken thighs from a previous night’s dinner. Five of six stalks of celery, five green onions, and an apple. Suzette made a Mayo and lemon juice and zest dressing that I stirred into the salad.
We watched 1/2 of a video guide to the Marvels of Argentina, ate some potato chips and several chocolate chip cookies, and went to bed at 9:30.
