April 13, 2022 Breakfast - Refried Beans and Chicken on fried handmade tortillas with Cole Slaw. Lunch - Vista Guayabitas Restaurant Dinner - Ham Sandwich and shrimp at Villa Bali


Another interesting day of travel.  When we travel to new locales usually I drive and Suzette navigates and that is how we traveled today.


We woke up, packed, and dressed and made breakfast.  Suzette served us bowls of yogurt with the last of the fig and raspberry compote and I sautéed two of the hand made tortillas in butter and then the refried beans that had the grilled chicken we bought in Tizapan at Restaurant Cabana.  I then put the refried bean and chicken mixture n the tortillas and garnished that with the Cole slaw that came with the chicken.

I could not eat it all.  We then cleaned the kitchen and packed the car and drove to Sayulita.


The roads were better today. At Jocotopec we entered the Guadalajara to Compostela cuota road that was four lane highway.


At Compostela we went back onto the libre jungle road that wound around hills and valleys and over mountains as we descended from the highlands to the coastal plain where it straightened out a bit near the beach.


There was lots of traffic, so around 2:30 we decided to take a break and eat lunch at Guayabitas.  Suzette soon found an interesting restaurant named Viste Guayabitas about 1 mile from the highway.


When we arrived we were startled by its siting at the top it the highest hill overlooking the entire crescent shaped beach of Guayabitas and beyond.


All the tables were lined up next to the railing with spectacular views of the town and beach.  


Suzette ordered fried Calamari and I ordered tuna ceviche.


Suzette’s fried calamari were fresh and lightly battered served with a mild  flavored mayonnaise.


My dish was amazing, a pyramid with a base of fresh cubed mango, then about 1 lb. of cubed fresh tuna that had been tossed in lime juice, then a layer of cubed avocado and finally a pile of long cucumber threads.  It tasted a good as it looked.  The simplicity of the ingredients lightly tossed in lime juice was impressive.

I enjoyed the tuna ceviche immensely and had trouble finishing it, but Suzette helped me.


Suzette had a margarita and I drank a Coca Cola.


The thing I liked the best about the restaurant were the frigate birds sailing along on the air currents at eye level near the restaurant.


We then drove the last 20 miles to Sayulita and on the jungle road to Villa Bali where TR and Linda have a house.


They had invited us to stay in their guest room for the last two nights of our trip.


They had gone to PV, so we rested from 5:00 until they arrived around 7:00.  I actually got in a hour nap.


When they arrived we put our groceries with their groceries into their fridge.


We then made drinks and Linda brought a platter of shrimp out as a snack.

We ate and talked until 10:30.


I ate my half of the half ham and cheese sandwich I had made in the morning.


Viste Guayabitas is my newest favorite restaurant.
