October 3, 2025 Lunch - Tabouleh and goat cheese Salad. Dinner - Leftover Trout soufflé with creamed Spinach
I did not sleep well last night so I slept until 8:00. Then I c worked at my desk trying to enroll in Robinhood without much success. At 10:20 I drove to my podiatry appointment and when it ended at 11:00 I drove to El Super to shop for produce. I bought a pineapple, a mango, two oranges, and a papaya for tropical salad. I also bought three heads of lettuce, one red and two romaine, plus beautiful leeks, Italian squash, an acorn squash, three small avocados and two larger avocados, snow peas, brown and red onions, two lovely Pasilla chiles, and a head of red cabbage for duck.
When I returned home I was hungry but found that Suzette had eaten most of the Vietnam noodles, so I made a Tabouleh salad with a diced tomato, goat cheese, red onion rings, and green and Kalamata olives.
I ate several pieces of the Parmesan toasted,pita bread from last night’s meal and drank a glass of water.
I napped from 2:15 to 3:15 to try to catch up on my sleep. Then I checked my portfolio and had a slight loss due to a $1.27 drop in Nvidia.
I worked a little and at 4:30 I sliced leeks and potatoes and cooked them in 1/2 water and half Chicken broth for about an hour to make Vichyssoise.
Suzette started peeling and sectioning quinces and I joined her when I finished slicing leeks and potatoes until 6:30 when we took a break to fix dinner, which was easy tonight. I chopped onion and garlic and destemmed a collander full of spinach. Suzette sauted the onion and garlic until transparent and then added the spinach and a dash of white wine and finally cream to finish the creamed spinach.
I opened a bottle of Red Newt 2013 Bullhorn Creek Riesling that w as lovely and Suzette reheated the trout soufflé in the microwave and then served two portions covered with the creamed spinach for a wonderful second. dinner of soufflé.
I peeled and sliced quinces for at least two hours after dinner and Suzette went to bed at 9:00 and I followed at 10:00 after watching a lively first half of the football game between SanJose State and New Mexico University.
