October 8, 2025 Breakfast - Granola, milk, yogurt, and Tropical Fruit Salad. Lunch - Menudo at Garcia’s Kitchen. Dinner - Roasted Pork Tapa with Spinach and Rice


Another great day of food and exercise. I awakened around 6:00 and since we had eaten all of the Vichyssoises last night there was room 8n the fridge for a large bowl, so I decided to make tropical fruit salad. I peeled and diced a pineapple, a papaya, a mango, and two oranges and added the juice of a lime.


I then ate a bowl of granola with milk, yogurt, and tropical fruit salad.


I worked and watched the market. Jen Sun Huang was on Squawk Box extolling the benefits of A I and Nividia took off as well 

as most of the other high tech stocks. At 11:00 I decided to go for a long walk to vote and then eat lunch and return home. By breaking the walk into three parts I was able to complete it easily.  Pi walked to the Clerk’s annex at 15th and Lomas first to vote. After I voted I walked back to Garcia’s Kitchen on Central and ate a bowl of menudo for lunch, with onions, lemon juice, and oregano.



After lunch I walked home, arriving at 1:00.  I worked for a while on several pleadings  with a break at 2:00 to check my portfolio. Nvidia up $4.07 at the close and lots of other tech na,es up also. I was sad I had sold some of my less important stocks because it was a great day in the market. My portfolio gained 1% to hit a new high.


I worked until 4:00 when I watched the news and rested and read the Human Stain.


Suzette came home around 5:00 and we started cooking at 5:30.


Dinner - We decided to make one of our favorite tapa recipes by Jose Andres, roasted pork tenderloin with sautéed apples, and onions. I sliced an apple and 1/2 of a large onion and a pork tenderloin with sautéed into seven or eight pieces and went to the garden and picked seven of eight stalks of oregano.


Here is the recipe.


Suzette sautéed the apples and then the onion slices in butter and olive oil. Then she added the pork and coated it with butter. Then she added the oregano stalks and roasted the ingredients in a 250 degree oven to 15 minutes, turning them after 10 minutes. Then she removed the sauté pan from the oven and removed the pork and added 2 T. of brandy and 1/2 cup of chicken stock and reduced that slightly to make a light sauce. Then she added the pork slices back to heat them.





Tonight we served the dish on fresh spinach and I heated about 1 cup of the leftover basmati rice from lunch at Arianna last week.


We opened a bottle gran Reserva Rioja that I liked very much named Finca Principes. I think I bought it at Costco.



After dinner I read until 8:00 when I watched a Nova episode in the Human series. This week it covered the migration of the first Homo Sapiens to North and South America. It featured human footprints found at White Sands that May be as old as 23,000 years.


At 9:00 I drank a Calvados with a cup of tea and ate the apple turnover Suzette brought me from the Bistro.


The result of my long walk was over 5000 steps and sore legs.
