October 12, 2025 Breakfast - Sausage, mushrooms, a shishito, onions, and cheese scramble. Lunch - Chicken Salad with buttered and cheese Pita Dinner - Pasta with Chicken, mushrooms, onion, garlic, and Snow Peas
I awakened around 7:30 and checked with Suzette on breakfast. I offered to cook. We decided on a Sausage, mushrooms, a shishito, onions, and cheese scramble. It turned out to not be an omelet because I made it in my wok. I sautéed all the ingredients except the cheese and egg. Then I lay slices of Manchego on top of the sauté and after a minute as the cheese softened I poured three whisked eggs over the cheese and sauté.
I toasted a slice of Whole wheat bread and spread butter and berry preserves on it and drank tea with it.
I covered it with the wok cover for a minute or two and then flipped in three sections, as I often do, and waited for the egg to congealed and then served it. I used a lot of sausage, so it was heavy. We each ate about a cup and then I put the rest into the fridge in a covered plastic box.
This morning Suzette soaked white beans today to cook. She plans to made beans and fish.
I watched Fareed and then looked at a Norwegian cruise line catalog with Suzette from 10:00 to 11:00 when Suzette left.
I then worked on a pleading until 12:30 when I became hungry. I went to the garden and picked cherry tomatoes and basil tops. I then made a salad with chicken, goat cheese, red onion, green olives, chopped basil and cucumber from out garden with a drizzle of olive oil and lime juice.
I also toasted three pieces of one of the Iraqi pitas and buttered it and sprinkled it with grated Parmesan cheese and cooked them in the microwave for 45 seconds to melt the cheese. They were a bit tough but delicious also.
After lunch I watched the Carolina Panthers beat Dallas 30 to 27 and then from 3:00 to 4:00 went shopping at El Super. I bought broccoli, Brussels sprouts, sweet potatoes, two ears of corn, lemons, leeks, an avocado, Snow peas, limes, beef ribs, grapes, Bartlett pears, and milk.
When I returned I read my book with a limeade until Suzette arrived at 5:00.
She was hungry so we started cooking at 5:30.
Dinner - I chopped 1 1/2 onion and eight or nine cloves of garlic for dinner and Suzette’s beans.
Suzette also made chicken stock from the roasted chicken and chipped chicken and destemmed the snow peas while I prepped dinner. She also boiled a handful of inch wide pasta.
After the onion and garlic, I diced 1/4 yellow bell pepper and four mushrooms.
Suzette then sautéed the onion and garlic she did not add to the beans, which she began cooking with the pan drippings from the roasted chicken we cooked yesterday.
When the onion,garlic, mushrooms, bell pepper, snow peas, and chicken were cooked Suzette added white wine to the mixture to create a light wine sauce.
She then plated pasta bowls with pasta covered with the chicken mixture, drizzled some grated Parmesan cheese, and finally lay 1/2 of a burrata on each plate. It was a luscious plate of pasta. I poured out the rest of the Kirkland Sauvignon Blanc from New Zealand.
We watched Miss Fisher, then some of the Chiefs v. Detroit Lions NFL game and then PBS Masterpiece theatre Maigret, then I watched some of gold, and finally my favorite Sunday show, Astrid, another fabulous French police mystery about a savant named Astrid who solves cases with deep reasoning.
I blogged and went to bed around 12:00.
