March 19, 2025 Lunch - Pita Pocket Sandwiches with Bologna. Dinner - Crab Cakes with Steamed Asparagus and tomato and cucumber salad
At 8:30 I ate a bowl of granola with tropical fruit salad, yogurt, and milk while listening to Jensen Huang discuss Nvidia and the future of AI.
Then i spent over an hour completing an international wire transfer for a deposit for a meal in Argentina during our trip.
At 12:00 I toasted two halves of a pita and filled them with slices of Lebanon Bologna, tomatoes, Tzatziki, tabouli, and lettuce. I drank a glass of yogurt drink and ate fresh homemade dill pickles and green beans with the sandwiches. I felt a little fermented after lunch.
Mohamed arrived at 12:45 so I cut my lunch short and we spent 2 hours filing in a PAN form for him.
Then I called a new client who needed help with a lease negotiation and we worked until 4:15.
I then Meditated from 4:30 to 5:00.
After mediation I tried to walk but the wind was blowing and the temperature was dropping, so i turned around when I reached the end of the driveway.
Suzette was reopening the Bistro today with a wine tasting and food tasting for Spa members and guests. Three dishes were sampled, chicken cassoulet, chicken mole, and Cuban Sandwiches.
When she arrived home at 6:30 we rested and watched the news and at 7:30 started to cook dinner.
Dinner - Suzette made crab cakes with the rather large amount of crab we picked during our meal Saturday night.
Suzette’s recipe combines crab meat with Mayo, Worcestershire, lemon juice, Mayo, bread or cracker crumbs, and an egg.
She then sautéed the 4 crab cakes in butter until browned on both sides.
Suzette steamed the last five stalks of asparagus.
I sliced a Roma tomato and 1/3 of a cucumber to make a salad for a garnish
We poured out the last half bottle of Palantir Sauvignon Blanc and watched the last of Rachel and first part of Lawrence.
After dinner I ate a bowl of cubed strawberries in cognac with chocolate cherry ice cream and whipped cream.
I got a phone call from Shahin to work on taxes after which I put the remaining crab cake, salad, and asparagus in the fridge for tomorrow’s lunch.
Suzette went to bed at 9:00 and I followed at 9:30.
