March 24, 2025 Breakfast - Avocado Toast Lunch - Leftover Grilled Marinated Pork Bun   Dinner - Roasted Root Vegetables with Sauted Salmon filet


I slept until 8:40 and then showered and dressed. Suzette toasted three slices of baguette and spread avocado and we had a lovely breakfast.








I sent out tax returns to the children and Billy and spent two hours with Comcast resolving billing issues for the apartment.  Then at 1:00 I ate the leftover Bun with grilled marinated pork from Mr. Pho on Saturday.


After lunch I drove to the Post Office, the Bank and the cleaners.


At 3:00 I returned home and checked my portfolio and discovered that my portfolio had a good day, an increase of more than 2%. Let’s see if the Market holds its gain tomorrow.


At 4:00 I helped Suzette set up the hoop houses on the north dive of one of our raised beds:30 I walked around the block which helped me accumulate over 3600 steps today.


When I returned at 4:50 Suzette informed me that she had not eaten lunch, so we watched the news until 6:00 and then started dinner. I went to the garage and fetched a bottle of The Pale Rose from Var, France


I peeled and cubed two carrots, a red potato, and a sweet potato plus a couple lb.s of Brussels Sprouts and about two dozen cloves of garlic and added them with the baking pan.


Suzette took over and seasoned and tossed the vegetables with olive oil, covered them with aluminum foil, and put them into a 350 degree oven.


I then sliced two shallots and about a cup of leek. When the vegetables had roasted for 39 minutes Suzette removed the aluminum foil, added the shallots and leeks and roasted the vegetables an additional 30 minutes uncovered.


Suzette then sprinkled the salmon fillets with salt and Szechuan peppercorns and sautéed the fillets for several minutes until they were cooked to pale pink.


We mixed the last of our bottle of IKEA Gravlax Sauce with a T. of Mayo and  1/2 T. of minced fresh dill to make a wonderful sauce for the sautéed salmon.


Suzette then served dinner and I poured the rose and we had a good low carb healthy meal.


I felt better after the meal than before and better the next morning.  Perhaps we are eating a healthy diet.


Two episodes of Antique Roadshow and bed for a night of 8 hours sleep.
