October 10, 2024 Lunch — La Cocina at El Super. Dinner - Madras Curry with Rice


I got up at 7:15 and watched the market open  and then dressed and ate a pain au chocolate with a cup of tea.  I still Was weak so I ate another as I drove to Shahin’s at 8:30.


This was a great day, because with Shahin’s help I completed my 2023 taxes relatively quickly and obtained a refund.


I arrived at 9:00 and by 11:00 the taxes were filed with one rather lengthy interruption.


I had enough money in my checking account to pay the estimated taxes for 2024 and Shahin’s prep fee due to the sale of the Jeanne Quick to See pastel and I will receive a refund due to an overpayment of taxes last year.


I am very happy. 


I drove to El Super and at 12:00 purchased a Chili Relleno plate with double beans and a Mexican coke.  After I ate I purchased a clutch of vine ripened tomatoes, lime, lemons, sour cream and onions.





I returned home a bit after 1:00.


I watched the market Closed and was up a little thanks to Nvidia.


I then prepared an amendment to a real estate contract and sent it to my clients and the escrow company for review a bit after 5:00 as Barack Obama began his speech. We listened and I diced a small onion and a Granny Smith apple while Suzette de-boned two chicken thighs and diced a baked butternut squash and rehydrated a cup of raisins.


We then sautéed the onion and apple and when they were cooked, I dusted them with Madras curry powder and Suzette added the chicken and squash plus someone chicken stock and a can of coconut milk.


We cooked the curry for about 1/2 hour to thicken and blend flavors and then heated PPI rice. I fetched two Negra Modelos and Suzette spooned a pile of rice into a bowl and we each ladled curry onto the rice and enjoyed a pleasant dinner.
