October 27, 2024 Breakfast - PPI Posole, Lunch - PPI Monkfish Spanish style with potatoes, onions, and tomatoes. Dinner - Chicken Mole with sautéed zucchini and White Kidney Beans
I watched soccer this morning and heated a bowl of last Christmas’ Posole with added minced onions, lime juice, and oregano. At halftime I walked around the block.
There are five teams bunched at the top of the standings. The second match of Liverpool vs. Arsenal was a tie so there was no change in their second and third position.
I read a few pages of the Ancient Celts public library’s book and am enjoying it very much. I have just begun reading the early history of the Origen of the Celtic people and it seems they were associated with the late Bronze Age and early Iron Age in Europe between 2400 years before Christ up to about 250 BC when the Romans became the dominant power in Europe. The Gauls were Celts as were the Welsh and many Irish and Galicians in Spain and Portuguese in Portugal, but they immigrated East into Germany, Eastern Europe, Anatolia, and even Asia Minor.
I watched an exciting football game between Cleveland and Baltimore and then went to the garden and harvested some basil leaves and stalks of tarragon and put them in brown paper bags to dry.
At 2:30 I heated the PPI Monkfish and Spanish style Potatoes, onions, and tomatoes leftover from dinner last night with a glass of Martin Codax Albariño and a piece of baguette.
Suzette came home at 1:30 and ate a swordfish taco for lunch.
We had decided to cook Chicken Mole, so I thawed out a package of four chicken thighs.
Dinner - Suzette braised the chicken thighs in canola oil while I made the mole sauce. I flavored about two cups of water with about a tsp. of dehydrated Knorr chicken stock. Then I began adding the solid Mexican Mole we bought at El Super and cooked it until it began to thicken, the we added 1/2 round brick of Mexican chocolate, about 1/2 tsp. of ground cumin, 1/4 tsp. of cinnamon, and 1 tsp. of crushed coriander seeds to the mole. We then placed the braised chicken in a medium Le Crueset casserole and covered them with mole sauce and baked the chicken for about 45 minutes with the last 15 being uncovered.
Sautéed Zucchini and White beans - While the chicken was baking I sliced a Zucchini and sautéed the slices in olive oil and after I flipped the slices I added a can of drained white beans and sautéed them together.
Suzette also baked the delicata squash I bought at Whole Foods and we baked six potatoes with the chicken For more PPIs.
When the chicken had baked an hour Suzette served a thigh covered with mole sauce and zucchini and white beans and I fetched two Negra Modelos.
After dinner we watched the New PBS series, The Marlow Murders, and Dallas lose to San Francisco and a re-run of Have We Got News, the new CNN comedy show.p and I drank a cup of tea with two chocolate chip cookies and a sip of cognac.
Suzette went to bed and I stayed up to review a document and blog.
I enjoyed the leisurely day
