November 18, 2021. Lunch - Ham Salad with toasted cheese sandwiches. Dinner - PPI Chili Relleno Casserole with Country Fried Potatoes and Guacamole
PPIs sometimes make strange menus. At least it did for dinner tonight.
We had four soft avocados that were perfectly creamy crying out to be made into guacamole and the lovely PPI chili Relleno Casserole. The only question was what vegetable?
Since we had PPI baked sweet potatoes and a Yukon Gold, the obvious answer from Suzette was to sauté a baked Yukon Gold and a baked sweet potato.
Frankly I was amazed how delicious the sautéed potato slices were.
We dabbed guacamole onto the chili relleno casserole to moderate the heat from the green chili and I ate way too many corn chips and bloated up.
The day was interesting in two ways. I attended an all day online seminar on Probate law and related topics, such as the new right to die act and the new notary public law.
The other thing that was super interesting was that the market blessed my major stock positions with more than healthy gains, including Apple, Nvidia, Home Depot, and Moderna. I was completely distracted from the market action by the seminar, so don’t know why there was such buying of those stocks, but the result was one of my best days in the market in a very long time. My portfolio was up 2%.
The NASDAQ hit an all high as did my portfolio.
I ate a peanut butter and honey sandwich on toasted whole wheat bread at 10:00 a.m. and a couple of cookies with a cup of tea at 3:30, besides the ham salad at 12:30, with tomato, ham, green olives, sliced radishes, red onion slices, and green leaf lettuce.
