March 1, 2020 Breakfast – Vegetable, cheese, and Prosciutto Omelet Lunch – Tabouli with Pita bread. Dinner – Nachos and Guacamole at Willy’s

March 1, 2020 Breakfast – Vegetable, cheese, and Prosciutto Omelet
Lunch – Tabouli with Pita bread.  Dinner – Nachos and Guacamole at Willy’s

Today was a Blue Zone day for me.

We got up and watched the news but were hungry so decided to cook breakfast.  Suzette combined a container of PPI sautéed vegetables with some Jarlsberg cheese slices and slices of prosciutto to make a lovely omelet.  I toasted slices of French baguette and buttered them and spread them with marmalade and drank a cup of camomile tea.
Suzette made her usual Sunday Bloody Mary.

After breakfast Suzette went shopping for the Center and bought new pillows and coverlets for the guest bedroom in our house.

I weeded for an hour while she was shopping and felt like I was in the blue zone of northern Okinawa.

When Suzette returned shortly after noon we were hungry, so she heated a pita bread and filled small bowls with tabouli.  I used No.1 bulgar wheat for this tabouli and we both liked the smaller size better.  No. 1 for ever onward.

We rested and watched some of Sweet Home Alabama with Reese Witherspoon until 3:00 when I rode for 45 minutes and Suzette walked for 45 minutes.

I then made guacamole with four small avocados, ½ onion finely diced, two cloves of garlic minced, juice of a large lime, 5 or 6 dashes of Mexican Valentino hot sauce, ½ tsp. Salt, and about ½ cup of chopped cilantro leaves.

Suzette recycled the last 30 oz. of the Texas chili we made for the Super Bowl into nachos.  She diced and sautéed ¼ pasilla Chile and some onion in a small skillet and covered tortilla strips we bought yesterday at Costco with the sautéed pasilla, onions and the Texas Chile and grated Dubliner cheddar cheese and baked the nachos in the oven until the cheese melted and the nachos were heated.

We drove to Willy’s and ate the nachos and guacamole with him and watched the sun set on the Sandias, which was beautiful from his deck.

We returned home around 7:20 and finished watching Outbreak withDustin Hoffman, Cuba Gooding,
 Donald Sutherland, and Rene Russo.

A little after 8:00 after finishing the laundry and making the guest bedroom bed, Suzette turned in.

I stayed up to blog and drink a cup of camomile tea.

All the fridges are full of food for the Center so we did not prep any large quantity of food, such as Tropical fruit salad or Vichyssoise today.
