November 30, 2018 Lunch – Padilla’s. Dinner – New Recipe Salmon Stuffed Baked Acorn Squash

I made a big breakfast. I fried three strips of bacon and then added a few spoonfuls of the PPI potato medley and some dressing and heated them and then added two eggs and fried the whole mess together. The result looked awful but tasted delicious.  Here is a picture.


At 12:30 Joe Monaghan came by and after showing him the house we drove to Padilla’s for lunch.  As we talked I discovered that Padilla’s is his favorite New Mexican restaurant in Albuquerque also.  It was full at 1:00 but we were soon shown to a table.  We both knew what we wanted so as soon as the waiter arrived we ordered.  Joe ordered blue corn rolled chicken enchiladas and I ordered Chili Rellenos. We both ordered double beans and green chili and onions.  Besides being one of the best informed persons on New Mexico politics, Joe is a foodie.  He told me, “My mom was a waitress, so I know and demand good service.”  Fortunately, today our waiter was a very efficient young man who was reasonably attentive.








We both loved our dishes and cleaned our plates and then devoured several sopapillas, while we talked politics and food and family and other gossip.

We sat and talked until around 2:30 and then I drove Joe back to his condo at Park Plaza.

When I returned home I discovered that the market actually went up today, so perhaps this extended
period of downward pressure on the Market is over.

I worked until 4:15 when Suzette came home.  It is hard to get excited about cooking with heat.  We have gas but the boiler for heating system is broken and must be replaced.

Suzette came up with a new recipe and a way to heat the house.  She baked a kabocha and acorn squash and three sweet potatoes in the oven for about a hour.  She then heated PPI salmon and then halved the acorn squash and filled each half with butter,  brown sugar, and salmon.  When the acorn squash and ingredients were heated she garnished each with a dollop of cranberry relish to create a light dinner.




We opened the bottle of 2017 Kris Italian Pinot Grigio produced in the Venezia region that I purchased at Trader Joe’s this week for $5.99.  It was surprisingly good with slight minerality and no bitter aftertaste.  It lacked some of the fruitiness of the Benton Lane Pinot Gris, but replaced it with an assertive acidity that would be great with a dish with fish and/or pasta in a cream sauce, for example.  I liked it a lot, even its artist created label.




We watched the news shows that were covering the guilty plea by Michael Cohen that he had lied about his dealings with the Kremlin during the spring and summer of 2016 to cover for his earlier lies to Congress to match Trump’s public pronouncements during that campaign that, “I have no business connections with Russia.” And Cohen’s tantalizing comment in Court that he informed the family of his dealings with the Kremlin during the same period, when they were lying also about no dealings with Russia to match Individual 1’s statements.  Cohen’s partner in developing the Trump Tower Russia project, Phillip Sater, has also been talking to Mueller and probably filling in the details and corroborating Cohen’s statements.

Fridays, especially Fridays preceding international conferences that Trump attends tend to be particularly newsworthy insights into the Mueller investigation. Next Friday will also be newsworthy because Mueller will go into court to explain how Manafort broke his plea agreement.  We may hear how Mueller learned that Manafort broke his agreement, which will give some insight into the inner workings of the Mueller investigation and perhaps another footnote for the history books.

After watching Washington beat Utah for a bid to the Orange Bowl, we soaked in the hot tub and then went to bed a bit after 9:00.
