July 15, 2019 Lunch Chicken Salad Salad. Dinner – Chicken Enchiladas with refined black beans

A busy day of menial tasks.  Called Mike who came by to check the swamp coolers.  Called the plumber to fix a leak. Went to the candy store to let the worker pick up the corbels for the patio deck upstairs.

At 11:30 I made lunch, a salad of Romaine lettuce, tomato, Vidalia onion, a pickle diced, and Monterrey jack cheese, plus chicken salad and a bit of dressing.  I drank water and ate three buttered rye hard bread crackers.


 I ate and watched the Tour.  Another amazing day of so many this year.  Every day a different person has won the stage.  Today’s big surprise was a breakaway from the Peleton by the Ienios team and others in a strong crosswind about 25 miles from the finish that caught many of the GC contenders unawares at the back of the peloton.  The breakaway pushed out to an about 2:00 lead by the finish and completely upset the standings of the top 10 places.  They did not unseat the leader Allaphillipe, but it got Geraint Thomas a few seconds closer and put Thomas’ teammate,  Bernal into third.  The starting third place person, Pinot, went to tenth.

I removed a container of enchiladas from the freezer after lunch to thaw.

In the afternoon I spoke to Susan about the menu for our dinner party tomorrow evening.  It sounds wonderful.  Susan will make gazpacho, fresh corn on the cob, and a lemon soufflés for dessert.  I prepped diced potatoes, onion, and fresh garlic from our garden for roasting tomorrow evening to be garnished with fresh mint.  Charlie came by and picked up the three filets and the Aji tuna steak around 11:00 that he will sous vide tomorrow and then grill to finish.

Suzette came home around 6:00 and at 7:00 Suzette heated a can of retried black beans in a skillet with avocado leaves, Hoja Santa leaves, and fresh and dried oregano, diced onion and a bit of chili powder.

I went to the fridge in the garage and fetched a couple of beers and Suzette plated pasta bowls with a pile of beans and a wedge of heated chicken enchiladas topped with a dollop of sour cream.  They were almost as delicious as freshly made enchiladas and the beans were fabulous.  This prep of the beans approximates the recipe by Diana Kennedy in her big cookbook on Oaxaca’s cuisine, except
we did not have any epazote.


We watched the Antiques Roadshow, but I left before the most interesting item.  Suzette reported it to me.  It was a small watercolor by Charles Russell used as place marker at a dinner party for twenty all of whom signed the back of the place marker.  It included persons like Will Rogers and other celebrities and was appraised at over $100,000.00. No one could doubt the piece’s provenance with all the original signatures.

We resisted the urge to eat dessert and went bed dshortly after 9:00.
