January 26, 2025 Brunch - Shrimp Omelet with Mozzarella, Spinach, and Cilantro. Snack - Bread with Cod roe, onion, and Goat Milk Gouda Dinner - Deep Fried Tofu with Chinese Vegetables, rice, and PPI Steak
I slept until 8:00( and then watched all or part of three fixtures. The most exciting and important fixture was Leicester beating Tottenham 2 to 1 to leap out of relegation
At 9:00 I prepped a shrimp omelet. I minced 1/2 shallot and 2 oz. of sweet onion, two cloves of garlic, three portobello mushrooms, and de-stemmed a cup of spinach leave and minced 1/4 cup of cilantro and cubed six large shrimp. Suzette fetched the skillet and put two T. of butter in the skillet to melt. Suzette whisked three eggs while I sautéed the shallot, noon, and garlic and then Suzette took over and added the other ingredients and then the eggs, while I sliced the 1/2 ball of fresh Mozzarella that Suzette lay on top of the omelet and covered the skillet with a larger pan to sweat the omelet and melt the Mozzarella.
After the mozzarella melted in a few minutes, I flipped one side onto the other and turned off the heat to let the inside firm.
I toasted two slices of the fluffy Sprouts French bread and spread each with guacamole to make avocado toast.
I then cut the omelet in half and served each 1/2 with a slice of avocado toast.
I drank green tea and Suzette drank a Bloody Mary and we felt like we were eating brunch on the beach in Sayulita.
We then walked in the Bosque from north of Central to the riverside observation deck south of Central and back which allowed us to reach 3900 steps again today, but without riding the bike.
When we returned we I started watching the NFL Divisional title games and a tight match between Aston Villa and West Ham that ended in a 1 to 1 tie.
Philly crushed Washington 55 to 23’ setting several post season records.
Then at 5:00 we watched Kansas City play Buffalo, which was a much more competitive game that the Chiefs won by 3 points.
We had trouble deciding on dinner until I remembered that there was leftover Fried Tofu and Chinese Vegetables from my lunch at East Ocean with Mike on Thursday.
Suzette fetched it and I made a little more sauce by heating water, dehydrated chicken stock, and a T. of soy that I poured over the dish before Suzette microwaved it.
It was delicious and just the right amount of food.
Later I ate two chocolate wafer cookies but soon felt the ultra processing and swore off them.
After Vienna Blood I watched a Holocaust special titled Eva, who was sent to Auschwitz with her twin sister to be experimented on by Dr. Mengele and miraculously survived to ultimately live in Terre Haute, Indiana and became an activist for forgiveness. But not until she sued Bayer for supplying the Nazis the chemicals injected in the experiments on the twin children.
I went to bed at 11:30.
