January 23, 2025 Breakfast - Leftover Baked Cod with Spinach Couscous and Cranberry Sauce. lunch - Sashimi with Sushi Rice. Dinner - Blanca’s Chicken Mole with Rice and Black beans and Cucumber, tomato, sweet onion, and Radish


Today I ate a lot of food to try to get rid of leftovers and fish that needed to be eaten.


In the morning I ate the leftover Baked Cod with cranberries with the leftover Spinach couscous and the last of the Cranberry Sauce from Thanksgiving.


After breakfast I noticed that ARM was under pressure.  I decided to buy 20 shares of ARM because it was down over $13.00 after gaining $22.00 yesterday. When it was at $166.45 I put in a limit order at $164.21, which was exactly $30.00 over what I paid for the first 330 shares. When I checked my portfolio in the afternoon after the market closed I was pleasantly surprised that the limit had been hit and the price for ARM than went back up to close at $166.56, so I made $2.35 per share in one day.


At 1:30 I began to get hungry and decided to make a quick sashimi lunch.


I thawed three sea scallops in hot water while i added 1 1/2 T. of rice vinegar, sugar, and mirin to the green rice left from last night’s dinner and mixed those ingredients into the rice and heated the rice for three minutes in the microwave to heat the rice and absorb the flavors. It produced a credible sushi rice that was a little sweet from the extra mirin.


I then sliced the salmon fillet, Aji tuna steak, and three scallops and filled dipping bowls with soy and wasabi in one and pickled ginger in the other. I also put some pickled Daikon and Korean basil on the plate and sliced two radishes.


I made a cup of green tea and in just a few minutes I had a magnificent plate of sashimi with several extra items. 




It took me a long time to eat all that food. Then I checked my portfolio and was happy that Nvidia that was down most of the day had gone positive $.15 and Meta was up another $13.00 and Caterpillar was up $8.79, so I had a slight gain for the day.


At 3:45 I walked around the block, resulting in 2500 steps by the end of the day, but short of my goal of 3000 steps.


At 4:30 I meditated with Etienne and Todd and at 5:15 lay down to read and take a nap until Suzette came home.


Suzette brought home a dinner of Chicken mole with rice and black beans and a cucumber, radish, sweet onion, and tomato salad. The mole was Blanca’s recipe and it is very good.


Suzette heated dinner and I fetched a Carlsberg tall boy from the garage fridge and we ate a pleasant dinner.



Suzette also brought a cupcake made with my chocolate torte recipe that had collapsed into the cupcake cup. I guess no one warned Suzette’s baker that the chocolate torte was very dense and heavy. She ate her cupcake after dinner and liked it, while i finished my beer as we watched Rachel and saved my cupcake for tomorrow.


At 8:00 we watched an episode of Midsomer Murders until 9:30 and then went to bed, I to blog and Suzette to sleep. She was tired after working in the kitchen and walking over 5000 steps at the Center.


Tomorrow I shall try to eat less and walk more.
