January 1, 2024 Breakfast - Granola with milk, yogurt, and Blueberries Lunch - Cranberry and pistachio Goat and cream cheese roll and crackers Dinner - Pork and Sauerkraut with Saffron Mashed Potatoes
Today was a very interesting food day and a wonderful day for UT fans and alumni like me because Texas won its Quarterfinal game to advance to the semi-finals for the National Championship.
Back to the food. Food was interesting because there were a series of snacks throughout the day instead of three regular meals that aggregated a full day’s amount of food.
I started out by eating a bowl of granola with milk, yogurt, and Blueberries around 9:30. Then around 10:30 as I was finishing a contract, I ate a chocolate croissant with a latte macchiato and then at 11:30 I started watching the Texas v. Arizona State game while switching back and forth to watch Arsenal beat Brentford to go into 2nd place in the PL. Arizona State rallied in the second half and the game and tied Texas in the 4th quarter and the game went to a second overtime before Texas won. Arizona State arguably has the best player this year in college football, Cam Sweetabo, so it was a titanic battle at the end.
During the game Suzette served us Mimosas made with fresh orange juice and Kirkland (Costco) Prosecco.
Then around 3:00 Suzette served a platter with the Cranberry and pistachio Goat and cream cheese roll she made at Thanksgiving with crackers. I ate heartily with cups of green tea.
I guess I had had enough nutrition by 3:30 to feel fine, but at 4:30 Suzette heated and served her family’s traditional New Year’s meal for good luck, Pork and Sauerkraut with mashed potatoes, but this year instead of making fresh mashed potatoes she mashed the PPI potatoes left from the December 23 meal of Spanish roasted Fish with saffron and pimenton, which eased the acidity of the sauerkraut for me.
At 5:00 we walked around the block, which allowed me to reach 3000 steps today.
After we returned from our walk around the block at 5:20 I ate a Swedish dessert that I love that is a roll of rum cake surrounded by a layer of pistachio flavored and colored marzipan and dipped in chocolate to cover both ends to seal in the rum cake, with another cup of green tea.
After 5:30 I did not eat anything.
We watched a wonderful movie called “The Holdovers” and then got into bed a bit after 9:00 to read and blog after a pleasant day of food and activity.
