January 22, 2025 Lunch - Leftover trust, corn, tartare sauce, red rice and broccoli. Dinner - Salmon bites on avocado with Sweet chili Mayo sauce, green rice, and tomato, cucumber, sweet onion, and radish salad
The market took off with Big tech leading. I ate a bowl f granola, milk, mango yogurt, and blueberries at 8:30.
I sent out several letters and at 9:30 Roger called and said he and Terrie would arrive at 10:30 to finish their trust. When they arrived we completed their wills and then went to Charlie and Susan’s to obtain their signatures as witnesses.
Then we went back home and I prepared an Assignment and a deed. When we finished at 1:30 I was drained mentally.
I re-heated the leftover trout, corn, tartare sauce, and cucumber, onion, and radish salad left from dinner two nights ago for lunch.
Then I watched Madrid crush Salzburg 5 to 0 in a EUFA match. I turned off the TV around 3:00 and at 3:30 when I was ready to go to Sprouts to buy the items she wanted I called Suzette.
Suzette said she was almost home so I waited for her and drove with her to Sprouts on Coors at Montano.
When we got to Sprouts we bought the micro greens and Burrata she needed for the Valentine’s Day Dinner and French bread, milk, egg noodles, and honey potatoes.
Dinner - The most difficult part of dinner was making the green rice. Suzette finally cooked spinach and the saved the light green cooking medium and then added the pureed spinach to add bits of green spinach to the lightly green colored rice.
Suzette wanted to cook a new recipe she found for Crispy Bang Bang Salmon Bites. It had a lot of ingredients for the sauce that we had and was an easy prep.

I skinned and cut the salmon into three strips and Suzette cut the strips into bites. While Suzette was gathering the ingredients and making the Bang Bang Sauce I spread brie on a piece of the French bread and ate it with a glass of Chateau Seraphin Côtes du Rhône and watched the USA men’s National soccer team take a 2 to 0 lead over Costa Rica.
While the salmon bites were baking I made another radish, sweet onion, tomato, and cucumber salad to which Suzette added a oil and white balsamic vinegar dressing.
When the salmon had cooked in an 425 degree oven for 10 minutes and the salad finished Suzette plated seven salmon bites on pieces of avocado on a pile of green rice on each plate and added spoonfuls of salad.
I poured the rest of the Palantir Sauvignon Blanc from Cotes du Gascogne (Trader Joe’s $6.99) into two glasses and we had an interesting meal because I found it easier to pick up a salmon bite with my fingers and then eat the avocado, rice, and salad with a fork or chop sticks.
I guess I lost all of my discipline from lack of sleep because after dinner I ate a bowl of vanilla ice cream with the last of the strawberries in Cognac and Hershey’s Chocolate syrup.
I was very tired from a bad night’s sleep so I went to bed as Suzette began to watch 80 for Brady on Netflix.
I completed this entry on the 23rd.
The Bang Bang Sauce for the salmon bites was interesting, although we deleted the shiracha.
