December 31, 2024 Brunch - granola, milk, yogurt p, and blueberries Dinner - crab Soufflé with corn on the Cobb


We went to Costco yesterday to buy fresh crab and the entire seafood section except for some tilapia fillets was gone. Suzette went back this morning at 10:00 when Costco opened and they had not received any fresh crab, but there were 1 lb. cans of crab meat from Indonesia or somewhere in the South Pacific. We have made crab soufflé for several previous New Year’s Eve dinners and it is one of our perennial favorites. This week we bought ears of fresh white corn at El Super, so we planned a simple dinner of crab soufflé and ears of corn with champagne.


I ate a bowl of granola with milk, yogurt, and blueberries at 11:00 because I knew it was unlikely I would eat lunch and I was right.




I called Bill Turner and went to his office at 11:30 and worked on a complaint until 4:30 and went through all the evidence and it became clear that there were wrongful actions in this case.


We ended up trying to call opposing counsel at 4:30 but that failed and I drove home.


At 6:00 we prepared our soufflé which took three or four steps that we shared to produce the final result. We followed Julia Child’s recipe for fish soufflé in Mastering the Art of French Cooking and substituted crab and added the shallots to the bechamel sauce while Suzette was cooking the roux that eliminated a step. Suzette cooked the soufflé in the steaming oven with some moisture. The soufflé rose some but did not spill over the edge of the soufflé dish, which was lucky because we did not collar the dish. 







 Shucked the corn and Suzette boiled it for a couple of minutes and we put the ears in a corn plate and rolled them in butter. They were delicious As a fresh vegetable.


I opened a chilled a bottle of Gruet 2014 vintage Blanc de Noirs. Its nutty flavor was perfect with the crab.


This was another successful New Year’s Eve dinner. We could not think of any place we would rather be and we were able to watch the NCAA game thar Penn State won.


We knew Jeff was happy and we were happy for Jeff.


After dinner I ate a piece of fudge, with a cognac and a cup of green tea.


We went to bed after the ball fell at midnight in Times Square at 10:00.


This was the first day I missed lunch and did not suffer muscle fatigue.
