September 20, 2024 Breakfast - Stuffed Croissants. Lunch - Pork and Vegetable Fried rice. Dinner - Fettuccine with Meatballs in marinara Sauce with sautéed Vegetables and salad.

September 20, 2024 Breakfast - Stuffed Croissants. Lunch - Pork and Vegetable Fried rice. Dinner - Fettuccine with Meatballs in marinara Sauce with sautéed Vegetables and salad.


We rested today. At 10:00 I cut slices of bacon off the rind and sliced some onion and a potato and a few slices of onion and sliced two croissants in half.  I fried the bacon and then Suzette sautéed onion and potato then toasted the croissants and scrambled eggs and added the bacon, onion, and potato. I sliced farmers’ cheese and Suzette made open faces stuffed croissants.  We drank Earl Grey tea and orange juice.

Then at 3:00 we made lunch. We sliced and sautéed the leftover pork from Suzette brochettes yesterday and two of Billy’s sausages plus cooked green beans, onion, and 1/2 pimiento. We made rice and stir fried all the ingredients.




We drank glasses of Martin Codax Cuatro Osos rose.


Billy and Elaine drove in with their Camino friends, Dede and Cary, who worked with Elaine at Presbyterian Hospital in Dallas and were walking as a group, whom they picked up in Pontevedra. They were all pharmacists.


We sat and talked and drank vermouth and Licor of herbs until 6:00 or 7:00 when we started dinner. Billy sautéed the meatballs and made a spaghetti sauce by adding a jar of sofrito and two jars of tomato sauce plus the sliced mushrooms and tomatoes to the meatballs and cooking the sauce for an hour until it thickened. We then heated water and boiled a bag of fettucine.


Elaine made a salad with lettuce, olives, tomatoes, and cucumber slices.


I sliced zucchini and pimiento chiffonade slices to go with the chiffonade sliced green beans I sliced yesterday and Suzette sautéed the vegetables in olive oil and butter with a bit of salt.







I made a simple dressing with lemon juice, olive oil, garlic and salt and cut slices of baguette and we poured glasses of red Mencia wine.


We gathered around the table and had a great meal.


After dinner we ate a milk chocolate with fondant Billy bought today at Foinz supermarket and I ate the last small piece of Santiago torte with a cup of Earl Grey tea and a sip of Spanish Licor de Herbes.


I went to bed shortly after 9:00 and soon others went to bed because the Camino girls will get up early to continue their Camino trek and the rest of us are driving to the spa at Mondariz at 9:00.
