 April 3, 2021 Lunch - Open face salami and Herring Sandwiches. Dinner - Cream of Asparagus soup with toasted bread with butter and goat cheese


Today was a wild day as we renewed our connection to The Wild Kingdom in our midst.


I watched English Premier League soccer this morning.  My favorite team, Leicester City lost to they prop team, Manchester City, so a sad day for me.  The only consolation was the team behind Leicester in the rankings, Chelsea, also lost.


I ate a whole wheat bagel with cream cheese and garnished with slices of onion and Gravad lax.




At 2:00 I toasted two slices of Bosque Bakery Rye bread and made two open face sandwiches, one with sour cream, onion, and pickled herring in wine sauce and the other mayonnaise, onion, lettuce, salami mustard and slices of Jarlsberg cheese.




Then our communion with nature began.  Suzette came home at 4:00 and we decided to go to Michael’s to frame two pictures and then to Costco.  As we left the house a bit after 4:00 I saw the Neighborhood Coopers Hawk perched on the bird bath.



After Michael’s we drove to Costco but arrived at Costco minutes after 6:00 and found that it closed at 6:00 on Saturdays.


It was our plan to hike to the lakes in the Bosque at 7:00 to try to see the beaver, so we drove home and made gin and tonics and took them to the garden and sipped them until 6:45.  While sitting in the garden we saw our first squirrel.  I came over the wall near the gazebo.  We thought it was utilizing our yard to go across the street to our neighbor’s acorn oak and hickory nut trees, but we are not sure that.


Then at 7:00 we drove to the Kit Carson Park parking area and walked to the lakes.  There were lots of ducks including wood ducks in the lake with the island and as we walked back by the first lake after sunset after 7:30, we saw a beaver swimming across the lake from its lodge.


This was our third beaver sighting at that lake.  We were thrilled to see three wild animals in and near our yard within a period of 4 hours.


When we returned from the Bosque a few minutes before 8:00 we heated the cream of Asparagus soup and ate bowls of it with slices of toasted Bosque Bakery rye bread smeared with butter and goat cheese.




We opened a bottle of Gruner Vitliner and drank glasses of it with the soup.


After dinner we drank glasses of Suzette’s homemade limoncello.


Suzette went to bed at 10:00 after Death in Paradise and I watched an episode of Grantchester and then blogged.
