September 21, 2025 Brunch - Lax and Bagels. Lunch - Penne with Sautéed Squash, mushrooms, chicken, onion, snow peas, with pesto
I watched parts of Bournemouth v. Newcastle and news and then the first half of Arsenal v. Manchester City, both of which ended in ties.
I also watched a wonderful documentary on PBS about the origins of Homo Sapiens 165,000 years to 125,000 years ago.
Then at 11:00 I watched the z eagles beat Rams.
Then at 1:30 we walked around the block.
We then fixed lunch. I made a cucumber, red onion, and cherry tomato salad that Suzette added a apple cider vinegar and sugar dressing.
I then diced about 2 lb. of yellow squash, four portobello mushrooms sliced, about 2/3 cup of diced onion, while Suzette diced 1 1/2 chicken breast and destemmed and tore in half 1/2 cup of snow peas.
She then went to the garden and picked a basket of basil and made pesto by processing them with pinon nuts, olive oil, and garlic.
She also boiled a pot of Penne pasta and we sautéed onions, then mixed in the mushrooms and squash, some pasta water and finally the chicken and snow peas. After the pasta was cooked and the vegetables sautéed Suzette added a couple of handfuls of pasta to the sautéed vegetables and chicken and then mixed in about 1/3 cup of fresh pesto and filled bowls and grated some Parmesan cheese onto the top and we ate lunch with glasses of French Belle Vignes Sauvignon Blanc.
After lunch we packed containers of the pasta and the salad and took them to Peter’s house and visited with him for an hour.
He is doing well and walked from his reclining chair to the front porch to smoke a cigar before we arrived and is walking to the bathroom.
When we returned home Suzette worked at her desk and I rested until 5:40.
At 6:00 we watched Bill Maher and from 7:00 until 7:30 when Willy called. We talked until 8:00 and then watched Marvel Murder Club.
We each snacked on a stalk of celery filled with red pepper hummus. Later I ate three slices of toast with the wonderful shrimp salad Jennifer made with a glass of Sauvignon Blanc and later still Suzette heated and split the remaining peach cobbler for a light but lovely dinner.
Suzette went to bed at 9:00 and I blogged and watched the Chiefs beat the Giants.
Then at 10:00 an episode of one of my favorite PBS Masterpiece Theater series came on, Astrid, that I watched until 11:00 when I finished the blog and went to bed.
